Chocolate Chip Sweet Potato Protein Cookies [Clean, Vegan, Gluten Free, Paleo]

Ingredients

  • 1 medium sweet potato cooked
  • 1 scoop vanilla protein powder
  • 1 t psyllium husk powder
  • 1/2 t baking powder
  • few dashes cinnamon
  • 1 handful chocolate chips
  • 1 t vanilla extract
  • liquid of choice

Instructions

  1. If you don't already have a cooked sweet potato you can cook one quickly by stabbing it with a fork and cooking it in the microwave for 5 minutes (or until soft)

  2. Preheat your oven to 350 degrees and grease a cookie sheet

  3. Mash up your sweet potato in a bowl

  4. Add your protein powder, psyllium, baking powder, cinnamon, vanilla extract and combine until mixed (add liquid of choice tablespoon by tablespoon if needed until a dough is formed)

  5. Fold in your chocolate chips (use as many or few as you would like)

  6. Once mixed, separate out and flatten into cookies (these will not go far, so feel free to lay them out in as big or little of a cookie as you prefer)

  7. Cook for ~10 minutes and then eat and enjoy! These will store in an airtight container in the fridge for about 5 days (but I always eat them in one sitting :) )
