White Chocolate Chocolate Carrot Cake Protein Notmeal [Low Carb, Clean, Grainfree, Gluten Free, Vegan]
Time for the March Redux post. This grain-free low carb white chocolate chocolate carrot cake is an alternative breakfast dish for your carrot cake needs! It’s packed with fiber, protein and vitamins!
I hope you all had a lovely St. Patrick’s Day and didn’t get too crazy! Now it’s time to prepare for the next upcoming holiday! This month’s redux post can help garner some ideas for you if you need some holiday meal/baking ideas.
Family Springtime Celebrations
Easter is April 1. Passover begins March 30. Whether or not you are celebrating either holiday, show us your favorite family recipes for springtime celebrations.
Easter is my second favorite holiday. I’ve written about my love of the holiday in a past post here! I’m still mostly a child so I get extreme pleasure in being able to find hidden things (like egggssss) especially when they are tricky. Would any one be surprised to hear that I love scavenger hunts and the likes? No..probably not. Haha. I really love it though.
As for the food? As with most families we have our traditions. We always eat our found boiled eggs in the morning and have an Easter Ham for dinner. Around this time of year is when carrot cake gets pretty big too. (I mean man so tasty…especially with a good cream cheese frosting?!!?! YUUMMM). However, I’ve really been wanting to try raw vegan desserts and a carrot cake one sounds super delicious. A lot of them seem to have too much sugar in them though, so I’m trying to figure out an alternative.
Carrots are a great source of vitamins. If you don’t like them cooked (I’m not the biggest fan..) try them raw (raw with peanut butter is one of my favorite ways to eat them) or if that still doesn’t do that for you try to hide the vegetable in another tasty treat (like carrot cake..or the recipe I’ve got for you below!)
White Chocolate Chocolate Carrot Cake Protein Notmeal [Low Carb, Clean, Grainfree, Gluten Free]
Ingredients
- 3 T coconut flour
- 1/2 scoop chocolate protein powder
- 1 T psyllium husk powder
- 1/2 carrot
- few dashes cinnamon
- dash nutmeg
- handful white chocolate chips
- optional chopped walnuts/pecans
- water/liquid of choice
Instructions

Shred your carrot in a food processor or grate with a grater

Mix your coconut flour, psyllium husk powder, chocolate protein powder, cinnamon, nutmeg in a bowl

Mix in your optional nuts, shredded carrot, and white chocolate chips

Slowly add in your water or liquid of choice until you reach your desired consistency

Eat and enjoy! Alternatively, place in the fridge and chill overnight for the next morning!
Recipe Notes
The amount of liquid you will need will depend on the absorbency of your powders. You will likely need more than expected as a side note
Feel free to make it as thick or thin as you want it!

Carrots are the best and I LOVE carrot cake! I never eat it because it’s a sugared-up cake but I can eat yours for breakfast! I have everything but the protein powder, so need to go get some ASAP 🙂
I love carrot cake too! OH man. I’ve def asked for it before for my birthday a few times lol. It can be very sugared up though, especially with a rich cream cheese frosting. I love healthy takes on unhealthy desserts for breakfast. The protein powder just helps to boost the satiety and thickness
