These muffins will get your daily dose of fiber in without much trouble and are easy to make! They travel easily and they are clean, vegan as well as low carb. Each muffin is only approximately 30 calories so feel free to indulge.
“April showers bring May flowers” is the traditional saying, but we all know that May ownward really brings out the party “showers”. So, that is what this month’s recipe redux challenge is all about. Here is the prompt:
Shower Season –It’s the season of graduation showers, bridal showers, and brunches galore. Show us your favorite healthy shower fare – be it brunch or drinks & apps or something more!
Now I know about bridal showers and baby showers and graduation parties, but you know what really gets me going? BRUNCH OF COURSE! Man, that is the best meal (ok it’s breakfast, so obviously that is why it is amazing!!). So good.
I just love breakfast so much and Brunch is just so fun. The hardest part for me is that people want to brunch at like 1130 AM. Gosh that is so late for me. I get up much earlier than that and am ready to eat usually pretty soon if not right after I wake up. It’s a struggle. Sometimes, I find it works to work out prior to brunch to take up some time. So, that is always and option to get your workout in before your big meal!
Or, you know, you try to sleep in because you know you’ve got to wait for a while before you get to your first meal. (Or you can eat breakfast, and be ready for lunch (aka brunch which is obviously just breakfast again) . So that could be another big win to be able to eat breakfast twice!!
Anywho, I know this post is suppose to be about things you can take to brunch, or a bridal shower, or baby shower etc and muffins are such an easy thing to bring. It is nice to be able to bring something that you know is something healthy and something that you can eat. This is especially important for people with allergies, or have specific goals with the foods that they eat. Brunch (and any food out can be notoriously unhealthy), so this can be a good alternative to at least have one dish that you know is good for you.
So, you can bring these muffins with you if you want, or just make them for any day of the week snack! The are packed with fiber (which is so important for your digestion) and I’ll warn you now that they are pretty chewy (so don’t expect a fluffy muffin), but I think they are super fun to eat and heck, you can eat the whole pan without setting yourself back if you want.

Strawberry Coconut Protein Muffins [Clean, Vegan, Low Carb]
Ingredients
- 1/2 cup coconut flour
- 1-2 scoops vanilla protein powder
- few dashes cinnamon
- 2 T psyllium husk powder
- 2 T flax seed ground
- 2 t vital wheat gluten
- 1/4 t baking soda
- 1 t apple cider vinegar
- 1/4-1 cup strawberries crushed
- 1 1/2 cup water
Instructions

Preheat your oven to 350 degrees and line a cupcake pan with liners

Mix all of you dry ingredients together

Add your liquids and mix

Fold in your strawberries

Let sit for a few minutes, then divide the batter among the liners

Bake for about 20 minutes or until done

Cool on a liner. Eat and enjoy.

Keep leftovers in an airtight container in the fridge.
