So, I know these posts have been pretty stretched out as of late, but I have been on the overwhelmed side with all this new stuff going on in my life. Let alone all of these holidays. I think I have finally finished my Christmas shopping. I think. Well…at least for my family and that’s the most important!

I was so very lucky to have most of my family come out and visit me for Thanksgiving. I’m not sure if they know how much that meant to me. Thanksgiving is my very favorite holiday. Granted, they had it rough I am sure and am not sure if they were happy about being here. I mean, we found out I didn’t even have enough silverware and no dining room table. Whoops. I still haven’t acquired a dining room table, or enough glasses as of yet, but oh well. I think we did just fine though and had such a wonderful holiday. So, I really hope you guys also had a wonderful holiday!

Now, do you want to know the most new thing for me?! I FINALLY got a new phone. Granted, I was pretty much forced to at this point because one of the apps I needed for work quit working on my phone. I need the app to work..so I just had to do it.

However, let me tell you I have been rocking a 5 for the past seven years. Yup haha. I’ve been waiting for the tiny phones to come back, but no such luck it seems. Now I have a new fancy phone thatttttt I really don’t know how to use!!! I don’t have a home button. I don’t have a microphone jack. I don’t know how to take a screen shot. I’m learning how to find my open apps. I haven’t had to input my passwords in so many years that I can’t remember how to get back into my apps. All my stuff hasn’t transferred over as it should have. The worst though, is that I no longer can do everything I need to do with one hand! My hand it too tiny to reach the top part of my phone now! So, I’m going to have to learn how to scooch the phone in my hand I guess, or just get used to using it with both my hands. I don’t know. First world problems haha. Sorry.

I’ll get used to it I’m sure. There are a lot of new things that I didn’t have on my old phone that are really nice. So, I’m going to hold on to that to help me deal with the fact that I’m not tech savvy, and that my phone is so much bigger than it used to be.

Spiced Pear Oatmeal Protein Bars [Clean, Vegan, GF]

Prep Time 5 minutes
Cook Time 25 minutes

Ingredients

  • 1 cup old fashioned oatmeal
  • 1 scoop vanilla protein powder
  • few dashes cinnamon
  • 1-1.5 T psyllium husk powder
  • 1-2 dashes ground nutmeg
  • 1-2 dashes ground cloves
  • 1 pear diced
  • water/liquid of choice

Instructions

  1. Preheat oven to 350° and grease an 8×8 baking dish

  2. Add your oatmeal, vanilla protein powder, psyllium (if using), cinnamon, cloves and nutmeg to a dish and mix together

  3. Dice your pear and add to your bowl

  4. Slowly add liquid of choice or water until a batter forms (*see notes)

  5. Add batter to your greased baking dish and bake for approximately 25 minutes or until cooked to your desired doneness.

  6. Cut into as many pieces as you would like! Eat and enjoy

  7. Store leftover bars in an airtight container in the fridge

Recipe Notes

The amount of liquid you use will depend on if you are using psyllium husk powder and how absorbent your protein powder is. Just add it slowly as you are mixing. Oatmeal is very forgiving. 

The more it bakes, the firmer it is. 

If you are planning on eating this for breakfast, then I recommend at least eating 1/4 of the dish instead of cutting it into smaller bars.
