I’ve got an awesome clean, vegan, low carb and gluten free simple cookie recipe that will be something unknowingly healthy to bring to any party, BBQ or just to make for yourself as a snack, or dessert. You can eat the whole bunch in one go if you want! Major score.
So I have some momentous news! I am officially done with residency!!!! Since I am not doing a fellowship, that means I am somehow FINALLY done with training which seems just crazy to me and it certainly has not sunk in yet.
I think I have just completed my last graduation? As per my brother when he found out:
“Wait she’s graduating again? Isn’t this like the 3rd time?
Actually, at this point if you count all the little graduations from pre-school, etc.? This would make my ooooohhhhhh….. 8th? graduation lol. Obviously, I’m a professional at graduating and I think this should be the end of it.
I’ve spent the vast majority of my 3 decades in some sort of school or training program. It’s been a VERY long road and I am only now going to start out in ‘real life’. Since high school, it’s been 12 years to get to this point. !!>?@<*^$ 12 YEARS!! That is just insane. No wonder I feel so far behind in real life.
Now, I am finally getting a break and am taking a bit of time off before starting my first professional job haha. I am currently helping one of my co-residents to move into her new apartment and city as she prepares to do one more year (so happy with my decision haha) and then will return home for a little bit to the very palpable excitement of my parents.
Technically, I still have plenty to do. It takes FOREVER to get licensed, get credentialled and et. cetera. Really crazy and SUPER expensive. It is really ridiculous. Especially since most graduating residents are deeply, deeply in debt from all the years of schooling without a good paying job.
Before I go on a crazy tangent though, I am hoping to be able to recover a bit before I get back into medicine. I do hope especially to finally get a good nights sleep, without getting woken up by a page/call. I do hope to get back to doing some of the many things I’ve had to give up because of my training.
Thankfully, I have never had to give up my love of travel (as my readers should already know) I really, really love to travel and experience other cultures. My traveling has really helped me get through these many, oft dark years of training. I am hoping to get to do some more over my time off so hopefully you can look forward to those travel stories. Already pending is my amazing trip to the Northwest, which was a new area for me! So, be on the lookout for posts about Oregon and Washington.

Finally, here is a simple, quick and healthy recipe that you can whip up for any holiday, party, BBQ, breakfast, snack or dessert. These light and spongy cookies are sure to become a favorite as they only take a few minutes to make and are packed full of protein, fiber and healthy fats.
Snickerdoodle Protein Cookies [Clean, Vegan, Low Carb, Gluten Free]
Easy, healthy protein cookie recipe
Ingredients
- 1 scoop vanilla protein powder (35 grams)
- 1 T psyllium husk powder
- 1 heaped T cashew butter
- few dashes cinnamon
- 1/4 cup coconut flour
- 1/4 t baking soda
- 1 dash salt
- *water/liquid of choice
Instructions

Preheat your oven to 350° and line a cookie sheet with parchment paper

Add your vanilla protein powder, cinnamon, psyllium husk powder, coconut flour, baking soda and salt to a bowl and mix.

Then, add your cashew butter and slowly add your water or liquid of choice until a slightly thicker than pancake batter forms (you want it stay formed when you place on a cookie sheet)

Use a spoon to spoon out your cookies onto your lined cookie sheet and bake for about 5 minutes.

Let cool for a couple minutes before carefully removing the cookies from the parchment paper

Eat and enjoy! (cool leftover cookies completely before transferring to an airtight container for storage)
Recipe Notes
Make your own oil free cashew butter! Here is a recipe of mine that only requires 2 ingredients to make.
The amount of liquid needed will depend on if you use psyllium and the type of protein powder you are using, so just add slowly and keep mixing until you get to the right consistency.
The number of cookies you make will depend on the size you make them. I got 14 slightly larger than silver dollar size cookies
The nutrition facts will depend on your ingredients. For mine, each cookie comes out to about 28 calories.
