Savory Sweet Potato & Brussel Sprout Salad [Lower Carb, Gluten Free]

Get some alternative greens for this upcoming holiday! Traditionally, the day of food generally consists of cabbage, corned beef, white potatoes and lots of beer. Perhaps you don’t like those things. Perhaps you want to change it up. This will let you do this, but packed with some mighty nutrients (hey there sweet potato, greens, garlic and brussels sprouts).

Unfortunately, I have my big annual OKAP exam on St. Patty’s Day this year. Blah. Also, studying is the worst! It’s extra sad since not only is this test taking up otherwise-could-have-been valuable free time (which doesn’t happen often), it’s also on a holiday! ANNNNDDD it’s also preventing me from going home for a few days longer. Boo.

On one hand, I have found studying before bed to be excellent for my sleep. On the other hand, it’s taking me forever trying to get through my study material HA!

So, this would be a good salad for me to have to power me through my long test! I hope you also enjoy it! As for most salads, feel free to play with ratios, take ingredients out (say..if you need it to be vegan, or to suit your tastes) or add ingredients in! The ingredients I have listed as for one salad. If you want to make multiple, just go up on the ingredient amounts! Otherwise, enjoy your holiday safely and enjoy all the green!

Savory Sweet Potato & Brussel Sprout Salad [Lower Carb, Gluten Free]

Prep Time 5 minutes
Servings 1 salad
Author AZ@...And A Dash of Cinnamon

Ingredients

  • 3+ cups lettuce of choice
  • 2 strips bacon cooked
  • 1 small sweet potato cooked and diced
  • 8 brussel sprouts
  • 1 1/2 T mozzarella cheese shredded
  • 1/4 t minced garlic
  • Dressing of choice**

Instructions

  1. If you don't have a cooked sweet potato/ bacon/brussel sprouts. Cook it/these ingredients in your preferred manner. (Steamed, in the oven, microwave, stove top)

  2. If you are cooking the above items, let them cool as you prepare the rest of your salad

  3. Rinse and cut your lettuce of choice and place in a bowl

  4. Cut and dice your sweet potato and bacon and top.

  5. Toss in your brussel sprouts, cheese and garlic and mix your salad. 

  6. Top with your preferred dressing (I used deli mustard, but balsamic vinegar and oil would be a good choice, as well!)

Recipe Notes

If you are low on time, sweet potatoes in particular can be quickly cooked in the microwave. Make sure to stab the exterior all around with a fork and then cook for ~5 minutes. You will know it is done when it can be easily stabbed with a fork. It will be very hot straight out of the microwave. Let cool for a few minutes before handling. It should peel very easily out of its skin.
