Looking for a sweet, but healthy breakfast treat for this Valentine’s day? Start your love-packed morning off right wih this decadent (but good for you) red velvet baked protein oatmeal for 2. (Single? Save the second one for a breakfast later in the week!). This #dessertforbreakfast meal is clean, vegan and glutenfree. Not to mention packed with satiating protein and fiber.
When I was little (think elementary school mostly, maybe middle and less so high-school) aged, I LOVED Valentine’s Day. I got so excited every year to make my Valentine’s Day Box (elementary school), write out my cards and select specific candy for specific people. I loved dressing up that day to go to school and placing my specially crafted Valentine’s day cards (and sometimes treats) in their respective classmates box. In return, I couldn’t wait to go home and read my Valentine’s and see what candy I got. (If you have been with me for a while, you probably know that I used to live ONLY on sugar for many years. Hence, holidays such as Halloween, Easter and Valentine’s Days were extra special for me in terms of personal gain haha)
The best was that Valentine’s Day was a true holiday in my elementary school. What did that mean? It meant parents came in the afternoon with special holiday treats and we’d have a party. Major win in my book.
This no longer happened in middle school, high school and above, alas. Valentine’s Day became more “grown up”. Granted, I still did exchange a few cards/candy and treats, etc to my friends thoughout these years, but it was more “exclusive” if you will and not a big ordeal. Although, I was very much a nerd (granted I was never pegged one, and I can totally see my younger self finding this card hilarious in high school).
Yes, I was definitely in all the AP classes. So, this would have been relevant and understood by many of my friends. Alas, those were fun Valentine’s Days. As I grew even older, (even while in a relationship), I no longer truly understood how Valentine’s Day was as big as it was. I mean, come on, you spend all this money and effort on your loved on for…one day out of the year?! That makes no sense to me. So, I became more like…
Don’t get me wrong, I do think Valentine’s Day is a lovely idea, but I think you should celebrate you loved one all year around. I don’t think it should be just one day of a very beloved gesture. Consider this stance, and as much as I believe you should celebrate Valentine’s Day, I truly hope you celebrate it and your loved one(s) all year around. It doesn’t hurt to send presents etc and say “I Love You” and time of day, any time of the year.
I implore you to really take the effort to show your appreciation for the ones you love (and all of those around you for that matter) everyday. I feel like all I see now is hatred and blame, etc. We need to bring love back into our everyday lives and treat people the way they deserve to be treated. A great treat, mind you, would be baking up this super tasty baked oatmeal treat for 2! It takes only a few minutes to prepare and can bake while you are getting ready in the morning! Healthy baked oatmeal for 2
Ingredients
- 3/4 cup old fashioned oats (or more if desired)
- 1 scoope protein powder (vanilla or chocolate)
- 2-3 T cocoa powder (less if using chocolate protein)
- few dashes cinnamon
- 1/2 cup mashed beets
- liquid of choice
- dark chocolate chips for topping
Instructions

Preheat your oven to 350 degrees and grease your oven-safe bowls

Mix all the dry ingredients together in a bowl

Follow by the wet ingredients (add liquid until you get a pancake batter consistency)

Divide batter into the 2 oven safe greased dishes. Top with chocolate pieces and bake for approximately 25 minutes or until done.

Make sure it is cool enough to eat! Enjoy!
Recipe Notes
Feel free to use psyllium husk powder (I would have done so if I had it available). Just remember it soaks up a lot of liquid (as does the protein powder) so you may need more than expected.
-This recipe is very lenient. Feel free to add more oatmeal if desired and any other ingredients
-If the batter becomes too thin, never fear. It will only take longer to cook. Alternatively, you could add more oatmeal to thicken it.
