Ingredients

sweet potato
1/4
large bell pepper
1
large
carrot
chopped
1/4
cup
black beans
(pre-cooked, rinsed and drained)
1/2
cup
raw slaw mix
(mine was cabbage and carrots
pinch
minced garlic
(use fresh if you have it!)
some
diced onion
dash
cumin
dash
chili pepper
Optional Toppings
salsa
cheese
avocado
Instructions
Chop up all of your vegetables (carrot, bell pepper, sweet potato, onions and slaw) and steam them until cooked (option of using microwave)
Once cooked, feel free to add black beans to steamer for a minute to heat them, or heat them via another method
Transfer steamer ingredients to a bowl, and mix in remaining ingredients (garlic, spices)
Top with desired toppings, eat and enjoy
Recipe Notes
Want to add protein? Feel free to add in meat of choice, or scramble up some eggs
Need more fat? Top with avocado and or cheese
Want to go hotter? Add some chipotle peppers, or add hot sauce of choice
Just want it to be a taco? Well then nobody’s stopping you! Throw it into a corn tortilla and you’d likely get a couple out of it.
The options are endless!
