Guys. Things are getting real. If I really stop and think about it, I’m actually almost done with my intern year. SAY WHAT? How do I know this? Let’s list out the reasons why in all likelihood the time is near even though I find it so hard to believe (Ok, so I might be in some denial.)

  1. Today is the first day of my last, I repeat LAST rotation.

Yup, all that stands between me and being finished is a mere 14 ER shifts. (Which unfortunately includes 3 days of night shifts in a row…over this weekend…Gross. We all know how I feel about nights. If you don’t feel free to check out my posts here, here and here lol)

2. I have now booked a moving truck.

Moving trucks are expensive! Granted I’m moving quite a long distance so thank goodness I got unlimited mileage, but it’s going to cost me more than a paycheck to get down there! Crazy! Thank goodness I’ve been saving like crazy this past year.

3. I have put a deposit down on an un-seen apartment. Lol. Fingers crossed it works out just peachy-keen?

And not something like this. Haha. Well…I mean…the pictures looked nice? So again, fingers crossed please! 😉

4. I have accumulated some boxes

Mainly from ones that my mother so graciously gave me to take back with me on my last trip home. However, I’m pretty certain I’m going to need a significantly larger number of boxes. Anybody have success getting them from the supermarket? I’m not 100% sure how to go about that.

5. I have…..*sob*…run out of oatmeal…and can’t replace it (yet).

Remember I’m trying to move as little as possible and have been working on emptying, and not replacing my food stores over the past couple months. I have run out of a lot of things, but I eat oatmeal everyday! Boo! I suppose I have a bit of steel cut oats left, but eh, I prefer my old-fashioned variety.

Since I eat oatmeal in some form, or fashion in the morning I have plenty of recipes saved up that I can share. However, this one is the one I decided to make with my last little bit so it is extra special. Don’t forget to toast your coconut, it makes such  huge difference! Instructions
  1. Cook your oatmeal the way you prefer with your preferred liquid*
  2. Meanwhile, toast your coconut**
  3. Once your oatmeal has finished cooking, stir in the remaining ingredients, eat and enjoy!
Recipe Notes
  1. *= this can be done via the microwave, or stove top. I prefer to use water and the microwave
  2. **= this can be done in the oven, stovetop, or other way. I toast mine in a sandwich maker lol
  3. The oatmeal will thicken as it cools
  4. If you are not used to using psyllium husk powder, start low (1t) and work your way up. Be sure to drink plenty of water. This is an excellent and clean way to increase your fiber amount.

  1. I love cashews, coconut, and chocolate! Since I will be getting a tooth I broke last week fixed tomorrow I will be drinking lots of smoothies and enjoying soft foods for a few days and then again in a couple weeks and oatmeal is already on my list! I had to go pick up some rolled oats as they are softer than steel cut.

  2. I LOVE toasted coconut on everything! I literally just toasted about one pound of it to top it on anything my heart desires! It also looks like I have all the ingredients for this oatmeal in my pantry, SCORE!

    1. I usually toast mine in small quantities and every time I’m always like “Why don’t you just toast all your coconut at once..I mean it is so much better than way” but alas I still don’t haha. Although while making this one, I toasted up more than usual to have some left over. You are much smarter to just toast it all at once. So yummy. I love the texture it gives to the oats too. I hope you like it, as well!
