Looking forward to making weekend waffles? Try out this new 6 ingredient recipe that is a clean,sweet, protein packed and easy to make. Depending on the protein powder you use, this can also be vegan since no eggs are required to make it!
Gasp! You guys don’t really know this that well yet, but I eat oatmeal in some form pretty much every day. However, this breakfast has no oatmeal in it! Craziness. Does it count that I made 2 baked oatmeals and a batch of protein cookies while I was waiting for my waffle to cook? Maybe? Ok, I’m counting it. Oatmeal was involved “in the making” of this breakfast. Technically this is a true statement. So nobody needs to panic. However, I am panicking slightly internally because I am down to only 2.5 lbs left of oatmeal. (I..umm..go through a lot of oatmeal and buy 10 lbs at a time).
Alright now that that is settled, let’s talk about why this is the case. As you know, I’m moving cross country in a couple of months.
Even more surprising is that my month of ICU is almost up. I’m finishing off my month on nights and have only a few more nights left to go. So as of right now, my schedule is very opposite of yours. If you remember how this all started , me trying to re-adjust after nights is very, very rough. So I’m not looking forward to having to go through that next week, especially since I have to immediately go back to days for my next rotation. But hey, at least I’ll be done with the ICU and will have a bit more normal of a life (if that is even a thing for me haha).
However, it is nice because I get to see some sun since I’m not that great at sleeping and all. As you know, this month I haven’t had much of a chance to see the sun. Up until nights its still been pitch black in the AM when I wake up. (Now it’s nice and sunny!) The days are for sure getting longer, though! Usually when I get home the sun is already gone and I’m all like:
Earlier this week, (still on days) there was still a tiny bit of sun left when I got home! I was like, “AHHHH THERE IS STILL SUN!!! YAYAYA!!!” and just up and plopped on the ground to bask in its glory since there was no one around and I was out of the way of the beaten path. Well, 5 minutes later, I open my eyes and see an older gentleman just staring at me maybe 20 feet away. Awkward. Then he goes, “Are you ok…?”
Me: “Oh yes, I’m fine! Just enjoying the sun.”
Him: A couple minutes later: “Mmhmmm…Did you faint?”
Me: “…No, Haha. I did not.”
Him: “Are you sure? Doesn’t it hurt laying on the ground?”
Me: “Nope it doesn’t hurt at all.”
Him: “Are you sure….? I don’t know how you can just lay there like that. You’re still sure you didn’t faint?”
HA! Yes, I was sure. If he was really that worried, I’m not sure why he just stared at me for who knows how long from a distance and didn’t just come up and say something to me. Oh well. Full disclaimer though, I was just laying on the concrete so I can see why he’d be concerned lol. Nevertheless, it was glorious! Yay for the sun!
I am so pumped for it to be warm and sunny and everything fully in bloom. So here is a recipe for you that makes it feel even more like it is summer! This is a lovely waffle recipe that has a cornmeal base and does not need any eggs! Depending on the protein powder used this could be vegan. Even better, each time I walked into my apartment the day I made it it smelled like glorious strawberries.

Have you ever fainted before?
- 3 T cornmeal (get cornmeal here)
- 1 scoop strawberry protein powder
- ~1/3 cup diced rhubarb
- ~1/2 t baking powder
- dash cinnamon (if you need some)
- ~1/2 T psyllium husk powder
- pure maple syrup (maple syrup should be only ingredient)
- strawberries
- Preheat and grease waffle iron
- Mix all ingredients into mixing bowl (I use a measuring cup so that its easy to pour)
- Add water or liquid of choice until the batter is thin enough to pour
- Pour batter into waffle iron and cook for several minutes. Continue until all batter is gone.
- Top waffles if you so desire, eat and enjoy!
- The waffle iron you use will determine the number of waffles you can make. I have a belgian waffle maker, so it will make less than a regular "toaster waffle size" maker.
- You can use any strawberry protein powder. I used vitacost's earthblends pea protein.
- I initially had no intention of adding Psyllium husk powder. However, I thought I made my batter too thin, so I added a bit of psyllium to thicken it up. But, by the time I got to pour my batter it was WAYY to thick and ended up adding more water, so likely if I was patient, I wouldn't have needed it. However, I would encourage it's use. It is a good source of fiber.
- I used rhubarb that I had pre-cut and stored in my freezer. Therefore, it was already soft. I would recommend softening your rhubarb if you are using fresh
- Don't have rhubarb? Try subbing it out for strawberries
- Need more fat? You could try adding some crushed almonds to the batter
