This weekend is Easter and my birthday!?!?!?! WHOO, I’m super egg-cited! Fact is, I love Easter. It’s my second favorite holiday. Why? Ok, so you’ll soon learn that I am still a complete child. I love egg hunts and searching for a basket. I also love eggs…and dark chocolate. So it’s wins all around right? However, my mother tries hard to refuse me the simple joy of finding eggs and a basket every year for the past ohhhh decade at least. I’m not even able to be home most years, either! NOT COOL! Usually, she’ll give in, though :). I mean seriously, when I do get to go home, I even color the eggs, stuff the plastic ones and dad hides the eggs..so technically she doesn’t have to do anything. SIGH. However, when she let’s me it’s all like..
So, mother, if you are reading this, I would really, really love it if 1. We could have an egg hunt this year and 2. You would let me participate. 3. I will accept this as a birthday present. If all goes wrong because the snow that was suppose to happen last weekend decides to hit this weekend? I recommend the following: Either would be ok.

I’d even be willing to wait until Dark for this. So there, see I’m willing to compromise. Besides, this is my last free/golden weekend for a long while! (AKA if you read my Let it be Spring post then you remember that this means I get both Saturday and Sunday off=rare occurrence) since I head back to the ICU for the next several weeks :(. Don’t worry though, I’ve been spending most of my free time that I’ve had the past couple weeks actually taking pictures of all my cooking (this is a super new concept for me lol) and writing down what I throw into my meals! Ok, now recipe time! This is an easy recipe to make, especially if you already have some scrambled eggs made. Â I came home with a whole bunch of leftover scrambled eggs and have been using those for many recipes. If you don’t already have scrambled eggs, feel free to scramble up a few to add. I topped mine off with hot sauce, but feel free to add whatever you want!
- 3/4 cup raw slaw mix (mine is cabbage and carrots based)
- 2 eggs
- 1/3 cup peas
- Scramble eggs to taste. (I already had a huge batch of scrambled eggs made)
- Add all ingredients to microwave safe bowl
- Microwave on high for 1.30 or 2 minutes or until slaw mix is soft.
- Top with hot sauce, stir and enjoy!
Let's customize!
- Don't like peas? Feel free to sub in any vegetable such as green beans.
- Want more veggies! Feel free to add more in!
- Need more protein? Up the number of eggs, but don't go more than 4, or add in meat of choice
- Don't like cabbage? Swap it out for spinach, kale or other study green
- Need more fat? Top with mozzarella cheese
- Need more carbs? Try adding a half cup of cooked brown rice, barley, or bulgar

I like egg bowls a lot because you can throw pretty much whatever you want into them. It doesn’t have to be fancy and I add all of the left overs.
