This clean bulgur bowl has plenty of fiber and protein to keep you full and is easy to whip together for a quick meal. It makes for a great lunch, or dinner idea. Actually, if you are a savory type of breakfast person, this would work for breakfast, as well!
Guys, my parents are AWESOME! No joke. I had such a good weekend. We did lots of cool stuff and for my birthday they even brought me a homemade cake!
For Easter, they actually set up an egg hunt for me in our hotel room!?!? Ahem, I just want to point out that they didn’t even read my last post about my love for “le hunt” because they were already in the car driving when it was published!
That just goes to show they know how much I love it. Hehe. Or, maybe because I’ve tried to cajole my mom into letting me take part for the past oh-so-many years and didn’t want me to whine about it this year lol.
When I got back up to the room after breakfast, Dad surprised me with my mission. Here are some of the reactions:
I got so excited I almost passed out. Dad told me there were 5 total and they were really hard and to let him know if I needed a hint. A hint? Oh…game on. Remember this?
Obviously, he forgot about the part where I’ve been honing my skills at locating what I need for many years now. Challenge accepted.
Now, I’ll admit when it comes to me finding the eggs it was me 5: eggs 0, but when it came to me trying to open the eggs? It was me 4: eggs 1. You see that orange one? Yep, i’ll have to admit it totally won and I COULD NOT OPEN IT. I swear it was like one of those trick birthday candles that you can’t blow out. When I finally gave up (a good many minutes later), my dad got it open no problem….well of course, I must have…loosened it up for him. 😀
How was your Easter?
Do you color your own eggs, or do you prefer to fill plastic ones?
Any good ideas on what to fill the eggs with if you want something other than the traditional Easter candy?
Although I got to hunt for plastic eggs, many of you may have hunted for real eggs! If so and you are looking for ways to use them try out the bulgur bowl below.
- 1/2 cup bulgur, cooked
- ~1/4 cup chickpeas, drained
- handful spinach
- dash tumeric
- 2 hard boiled eggs
- ~I teaspoon tahini
- ~1/2 teaspoon nutritional yeast
- Add chickpeas, bulgur, spinach to a bowl and heat
- In the meantime, slice hard boiled eggs
- Stir in all ingredients, top with additional ingredients if desired (I also added some dijon mustard) and enjoy!
