Cinco de Mayo is coming up soon! Here is a recipe you can use for your festivities. It is high in protein from the ground beef and eggs, has a lot of fiber from all the veggies and some healthy carbs from the sweet potato! It is a great, waist friendly and clean Mexican alternative when compared to more traditional recipes! Leave/swap out the ground beef to make it vegetarian.
So, sad to say, but I’m still not able to sleep well. GAH! Story of my life. Hence, even though I’ve got more time on my hand and can get up later, I’m still so tired! Boo! It probably doesn’t help that it has decided to all of a sudden go cold and rainy on me. Like seriously?! Here I thought I’d have a good chance at getting outside and enjoying warmer weather. There was one day I got back and it had been sunny all day and I was SO EXCITED to get a chance to go outside! But no, it started dropping heavy droplets as I was pulling it. Oh wait, then as I was getting out it started to pour. I was all like:
Then, to just to top it off mother nature threw some nice flashes of lightening and booms of thunder to make me well aware that no, I was not going to be able to go outside. I thought, “Well, fine, sniff sniff, maybe tomorrow I’ll finally have my chance.” Did this happen, well, no, not even close. I’ve had to bust out a fleece jacket and also some sweaters for some days! NOT OK!
I hope the weather is better where you are at. I was like….really…this could not have happened when I spent most all my time in the ICU and had no time to go outdoors anyway? Of course not. Oh well, here’s for hoping that the weather turns around for the better soon!!
STORY TIME!
So, aside from being able to feel how tired I am, I also have a story for you. One day, I am home from work and I get a knock on the door. I’m not expecting anyone, but I’ve made a friend or two at my complex so I thought, “Hmm, maybe they just want to say hi or see if I want to do something.” So I open my door and lo-and-behold it is some guy who I have never seen before and he goes:
“I’m not sure if you knew this, but you left your keys in the door?”
Sure enough, there were all my keys just chilling out in the lock still. HA! I was like:
“No, I definitely did not mean to do that, nor realize that I had done that. Lol.”
I mean seriously, who just leaves their keys in the door on purpose..? Lol.
I wish I could say this was the worst, but this was better than a few months ago when I was being killed on the floors and exhausted. I’m embarrassed to admit this, but it’s really just hilarious so I’ll share it with you. I was coming home after one of my calls so it was about 10pm, or so at night and I tried to open my apartment door with my car key.
Now you may be thinking, “That’s not so bad, they are both keys.” Well, true, but it gets worse. It’s not that I tried to open it with my car key itself, but it’s that I literally pointed my car key at my apartment door and hit the unlock button…..
….HAHHAHAHHAHA. OH MAN! YES, YES, I ADMIT THAT REALLY HAPPENED AND I AM HONESTLY LAUGHING SO HARD JUST REMEMBERING THAT MOMENT.
After I had realized what I had done, my face went all like:
Hehe, and then I laughed and was all like…”Aaaannnnnddd I need to go to sleep.”
Anywho, I hope you sleep better than I do! Here’s a Cinco de Mayo recipe for you to try out and there will be more to come!
How do you feel about Mexican food?
Have you done anything silly when you were tired?
- 1 sweet potato
- salsa as much as you want
- handful spinach
- ~1/2 cup or more slaw mix mine was just cabbage and carrots
- few dashes taco seasoning
- 1 egg
- ~1/4 cup cooked ground beef
- Stab sweet potato all around with a fork and place in microwave for a few minutes (I do about 3.30 or 4 min depending on size)
- I happened to have eggs already scrambled, but if you don't scramble an egg now and add to bowl along with the cooked ground beef.
- Add a great big dollop of salsa. More or less depending on taste. I love salsa so I added probably at least 1/4 cup
- Add big handful of slaw. (I probably added 3/4 cup)
- Add taco seasoning and mix
- Add handful of spinach on top. (Good to cover salsa, so it won't splatter)
- Place bowl in microwave on high for 1 min 30 sec or so until slaw and spinach is soft
- While that is cooking, carefully peel the skin of your sweet potato (since it will be hot), dice it and add the pieces to the bowl once it is finished cooking.
- 9. Mix with fork and enjoy
*If you don't have cooked ground beef on hand, cook it first and drain off the fat. Then, mix in the meat while you are scrambling your eggs.
Customization time!
- Want more fat? Add avocado and/or cheese!
- Don't eat meat? Change it out for cooked tofu, TVP made with taco seasoning, or protein of choice
- Options are endless. If you have specific dietary needs and need to make a substitution, but are unsure of what to do, just ask and we'll come up with an option that works for you!
I’m on MICU nights right now so my body is so confused about sleep and hunger. But YUM! My fiance and I made this recipe tonight and it was delicious! We had leftover slaw and sweet potatoes from your previous recipe so it was perfect. We ended up adding avocado, cheese, and taco sauce for more oomph. My fiance put it on a taco shell and ate it as a taco, works just as well!
Oh man yeah I feel you on that one. I’m glad to be done with my ICU nights. I hope yours are going well. They have the potential to be so brutal as I’m sure you have found out haha. I’ve had problems sleeping my whole life, so I feel you on being tired girlfriend! I hope you are able to get a good nights sleep sometime soon! Anyways, this slaw egg bowl looks delicious! Throwing an egg on top is the answer to all life’s problems. 😉 Cheers!
Oh no! Not being able to sleep is the worst! Maybe one day I’ll get it down. I’m planning on getting a new mattress when I move soon so maybe that will help some? Fingers crossed. Haha that’s a great way to think about eggs. I love them 🙂
