Happy National Fudge Day! Looking for a cool, creamy treat? Need a pick-me-up or guilt free bite of dessert? Try out these low carb frozen pumpkin protein fudge bites! They are clean, vegan and only require 4 ingredients! They have a bit of protein and fat to get you through a slump!
Since I said I would tell you a bit about the ED before, I figured why not tell you a bit about it now. Granted, I could tell you PLENTY of stories, and perhaps I’ll share some along the way in the future, especially since I will be in the ED plenty. For now, I’ll share just a few generalized things, and will give other generalized thoughts later. Here are the first few that I will share with you.

I use my hands A LOT and typically ask a lot from them.
Lately, they’ve been called upon to up their work load even more. Packing, cleaning, washing etc. has got them pretty beat. All I can say is this:
It’s also a great way to tell you that you’re not using enough hand lotion. MAN do tiny cuts burn and reveal their presence when they are full of hand sanitizer.
2. Shifts loads are so variable
I often found when doing a day shift, the early morning was generally VERY manageable. There was not a lot going on, which has its pros and cons. People get super superstitious though, especially when things are lite.
I’ve never been much of the superstitious type, but man, in medicine there are SO many people who refuse to let you say certain words, or phrases for fear of “jinxing” it. Lol. The times that are the craziest? Mid-morning the ED would always explode. You’d be sitting there with not much to do and then BAM! You’re all like, “Wait, what the heck? Where did all these people come from?”. Other crazy times, weekends, especially during the night. Granted most of those are assaults, traumas, overdoses, intoxications. Which brings me to my next point.
3. People like to lie.
Particularly when it comes to substances, legal or otherwise. We aren’t the police, we aren’t going to bust you if you are using something. All it can do it help us figure out how to help you sooner rather than later. However, I’ve heard everything. Some people are very honest which is great! Others? It’s more like:
I’ve had people claim they have only had alcohol to drink, and take one look at them and know they aren’t telling the truth. Then, the lab work shows they have everything else, BUT alcohol lol. I’ve had it the other way too, where people are OBVIOUSLY intoxicated and refuse to admit they had anything to drink only to find out their alcohol levels are THROUGH THE ROOF. I’ve also seen people do some really crazy things while intoxicated on one thing, or another. For whatever reason, people seem to particularly like to take off their clothes? Who knows. But, seriously people, leave yourself dressed and tell the truth.

Any plans to celebrate National Fudge Day, lol?
- Melt coconut oil if not already melted
- Add all ingredients in a bowl and mix until smooth
- Spoon/spatula mixture into silicon molds
- Place in freezer until solid
- Pop out of molds, eat and enjoy!
- Store extra in an airtight container in freezer
- This recipe is easy to multiply. It depends on what molds you have. I use silicon because they are easy to pop out.
- You could swap in a dash of pumpkin pie spice if you wanted to instead of the cinnamon
- Make sure your pumpkin is just pumpkin, no other ingredients on the ingredient list

Ah in this case I was using ED as Emergency Department in general, but it could be an abbreviation for that too! I come across a TON of interesting people, haha. I love the sound of these bites and that they are frozen. Minnesota is so warm lately that I reaching for anything frozen now.
Haha yeah certain parts of it in particular were pretty intense. They are great because you can store them in the freezer and pop one out when you need a cool treat. I’ve been to Minnesota once. It was lovely!! Your state is so beautiful and everyone is so nice there!
