Chicken potato eggplant bowl

Try out this satisfying clean chicken bowl that uses plenty of vegetables. It has an Italian flair with the addition of tomato sauce and spices. Since it has a good balance of carbs, fiber and protein and happens to be low in fat, it would be excellent as a post strength training workout.

I don’t know if you guys have the same problem, but trying to get certain things done while at home is really hard. There are always other things to do and I want to be with the family. However, holy crap, emails really pile up if you are not attentive to them. It’s been only a couple days, but I had a over a hundred to address! Geez! It was all like:

However, I’ve gotten to spend quality time at home with the family which- when I move in a couple months- I’m not sure how often I’ll be able to do that anymore 🙁 . I can’t believe that time is so soon! In that regard though, the family has been great. I keep getting stressed out with all the requirements, paperwork, trainings, etc that I keep getting from my residency program  to complete by the time I am down there. Not only that, there are the logistics for the move, and work too to think about. I may or may not have had a mini breakdown while I was home over this because some of it is so repetitive and just crazy time-consuming! It can be super difficult to manage everything on my plate. My mom though was a champ and is the best. She was fully supportive and said multiple times that she would do whatever she could to ease my burden. She is really wonderful.

I have a pretty long to-do list too, but sometime I just don’t look at it in a fit of frustration, or denial or spitefulness, or something and it’s all like:

Every time you get something accomplished, I feel like there are so many items to add to it! I will admit though, I really love to cross things off highlight things off my list. I will also admit I am also a huge lover of highlighters. They just really do it for me and in combination with using them to cross things off that I am done with. Perfect. I was never an overzealous highlighter, I just used lots of colors! Do you remember the people who used to highlight seriously everything? It was all like:

I never understood how they could then figure out what was actually important, or key things to remember when studying, but oh well. Each to their own I suppose.

Anywho, when you have plenty of things to do (whether referring to your checklist, or refusing not too) it is even more of a reason to have meals that can be made quickly. Although, while at home, I’m no longer the one doing all of the cooking! So, of course that helps too haha. (Although, breakfast is still deferred to me whenever I am home).

Ingredients

Instructions
  1. Cook, steam or roast all vegetables aside from the tomatoes
  2. Once cooked, shred/or chop up your chicken and add it and all other ingredients to a bowl (except the nutritional yeast, if using)
  3. Stir, (pop in the microwave if it needs to be a bit warmer) and top with nutritional yeast if desired. Eat and enjoy!
Recipe Notes
  1. With limited time, I used the microwave to cook the potato and soften the vegetables. Then, I added my cooked chicken, all other ingredients, stirred. I heated it again in the microwave for ~45 seconds to heat through and topped with the nutritional yeast.
  2. Feel free to swap out pasta sauce for the tomato sauce. However, check the ingredients. Make sure to use one that has no added sugar, or high fructose corn syrup.
  3. Keep the skin on your potato. It carries a lot of the fiber that a potato can provide.
  4. If you need to make adjustments based on your needs, but aren't sure what to do. Let me know and we will find something that works for you.
