Chocolate Covered Strawberry Protein Cheesecake [No-bake, guilt-free, low carb, grain-free]
Today we’ve got another tasty low carb, grain free, high protein no-bake cheesecake that requires only 4 ingredients and also a giveaway [Ended]! The first is based off my easy 3 ingredient chocolate protein cheesecake and the latter is based off the fact that I missed my opportunity to use freebie coupons when I had the chance and thought I’d let you guys benefit from my loss instead of just tossing them!

Here’s the situation. I was given a bunch of these coupons for a free bottle of core hydration water right before I moved. We all know that was a busy time (ok all my time seems to be busy, but that’s besides the fact lol) and that I was trying hard to use up all my food stores etc in order to move as little as possible! Therefore, I was not about to go get a bunch of waters to add to the load. Besides, I actually am not a fan of bottled water AT ALL. I prefer to use my reusable metal water bottle and carry it with me everywhere (any one who knows me can vouch for this statement haha). Sometimes, though, on occasion, I can see the use of disposable plastic water bottles.
Anyway, obviously I didn’t use them before I trekked across the country to take up residence in my new home. I recently found them as I was unpacking and went to look for them in my local store. They didn’t have them. Neither did the other store I tried. So, I went home and looked up the closest place to find them. They are a good half hour away and we all know I don’t have time for a special trip to pick up some water especially when I prefer my own water bottle anyway haha. Therefore, I figured I might as well put them up as a giveaway for you guys!
Full disclaimer here, I’ve never tried this water before. However, if you want to check out their website here is the link! They have both a ph-balanced line that has electrolytes and minerals in it and a flavored organic water line that has antioxidants. Not too shabby it seems. I tried to find an ingredient list, but alas could not. I’ll have to admit, the flavors sound awesome! They even have interesting ones like orchard pear which is intriguing. I usually drink plain water, but I’m not going to lie, I’m a huge fan of flavored water, but always check the ingredient list since a lot of flavored water out there is packed with sugar and therefore not doing you any good.
No matter how you get your water, though, my MAIN GOAL is for people to get and stay hydrated! I can’t emphasize enough how important it is for your body to be properly hydrated and the majority of people do not drink enough. Especially when it is hot outside, many people don’t realize how much you lose without even realizing it! People who are very active, those who work outside and the elderly are at particular risk.

Anybody else miss out on opportunities because they forgot about it, or just didn’t have the time to make use of what you were given?
- 1/2 cup cottage cheese
- 1/2 scoop chocolate protein powder
- 1/4 cup strawberries diced
- dash cinnamon (if you need some)
- Dice your strawberries and set aside
- Add all the other ingredients into your food processor and process until smooth
- Fold in your strawberries
- If you want it to be a stand alone as pictured, use a greased ramekin or dish of choice depending on number of servings you are hoping to make. (If you want to leave it in the dish, then no greasing is needed). Use a spatula to place mixture into dish of choice.
- Pop in the freezer for ~45 minutes (It should be firm to the touch, but not solid)
- If want stand alone, use a knife along the edges and flip over onto serving plate. If not, just serve from the dish and enjoy!
*If you forget about it in the freezer, don't worry! Just take it out and place in the fridge to thaw out a bit. *Too soft, don't worry about that either! Just stick back in the freezer for a little bit. It's a very forgiving recipe. I honestly usually just stick my food processor bowl and lid (without the blade) into the freezer and eat it straight from there. Less to do and less to clean. But, if you are looking to serve these, then feel free to place them in ramekins and pop them out like I have here!

Oh yeah! I first tried la Croix a little over a year ago. DEF a fan! I love sparkling waters haha. They have so many flavors too, but I haven’t tried them all

Lots and lots of water and hydrating foods like cucumber, melon, berries, lettuce, etc. This stuff sounds great!

Post-run, I usually have a glass of water with a Nuun tablet. Sometimes, I have a bit of Gatorade if I feel the need for sugar. Otherwise, it’s a smoothie after long runs!
What’s a Nuun tablet? I can’t say I’ve heard of that before but am intrigued! I do love a good smoothie too!
Oh! Nuun I’d a brand of electrolyte tablets, that fizz up in a glass of water. They’re great because they don’t have any strange chemicals, and come in amazing flavors.

Hm…I could certainly try whenever I get back home in a couple of months! I’ve got bunch of recipes stocked up for these times I’m away, but all of the cheesecake ones are with cottage cheese so far that I have. I have some ideas that may work for dairy free and will try to experiment for you at some point!

I only have vanilla protein powder, but I think that would work.
Yep, or just add some cocoa powder to your vanilla protein powder! Start small, maybe 1 t and taste test it since plain cocoa powder can be bitter if you add too much
