Happy 4th of July! Here’s another recipe for leftover burgers (or just in general if you have some ground beef you want to use)! These cheeseburger eggs are low carb, high protein and grain free! Eat these as a savory breakfast, or as a main meal later in the day!

Things here have been crazy. I’ve been trying to get myself situated in the mist of a lot of orientation of various kinds. My family was here for a few days which was so incredibly helpful, yay! But, alas, they had to leave so I’ve been working on getting things done on my own now.
I’ve been slowly getting things together and have started to slowly restock some of my missing food stores. Well, hello oatmeal. It’s been a long while. I also found watermelons on huge sale! I LOVE watermelon and can crush like half of one in a day lol. So, yep, I got 3 watermelons at one time. A week later? Oh, 2 may, or may not have been eaten already, lol.
It’s been a bit strange cooking and still haven’t really started it up again because I’ve been on the road/in a hotel for a while/have been provided food at some of these orientation sessions. I also still don’t have much of anything in term of food to cook with either, though lol. I’ll be away in a remote area for the next few months, so my access to the internet may be a bit sketch. Just warning you, if you don’t hear from me for a while. However, the next couple weeks I’ll be back and forth from that place to the city so well see.
Until then, let’s celebrate with food and fun and remembering why we are celebrating in the first place! Go ahead and flip those burgers and play in that pool, or whatever it is you are doing to celebrate the holiday. If you have leftover burgers, (or like I mentioned, just have some ground beef you want to use), feel free to try out these cheeseburger eggs! Or, you can try my other hamburger recipe if salad is more your thing!
Low carb, high protein and fiber hamburger salad with all the fixings
How are you celebrating the holidays?
Have you already seen some amazing fireworks?
- 1-2 eggs scrambled
- 2-3 dill pickle chips cut into pieces
- 3 cherry tomatoes (or any tomato, diced/sliced)
- 1/2 hamburger diced (Or 1/2 cup cooked ground beef)
- 1/2 T cheddar cheese shredded
- mustard
- If you have scrambled eggs already, then just assembled and heat all the ingredients together and top with the mustard
- If you don't have eggs already scrambled, I recommend just scrambling all of the ingredients together at one time and then topping with mustard after
- Eat and enjoy!
- Feel free to adjust amounts as desired.
- Use the recipe servings tool to figure out different serving size amounts.
- Feel free to use other ingredients that you like to put on your burger, if desired.
