Need a quick pick-me up snack? Reach for one of these chewy protein bites to get you through the slump for a cool, delicious treat. These bites are low carb and low calorie, but have a good bit of protein and omegas! Depending on your protein powder they are also clean, vegan and gluten free! They are quick to make and can be stored in the freezer.

Pathetic I know. Want to know what’s worse? I may or may have not had this single scoop left for months now :/ I couldn’t bring myself to use it since I had forbidden myself to get more since I have been actively trying to use up as much of my food as I can before I move. I can’t tell you how many times I’ve looked at my bag going “OH MAN THIS RECIPE WOULD BE SO GOOD WITH THIS PROTEIN POWDER RIGHT MEOW!!!”
This has forced me to come up with other alternatives as I work through my remaining food stores. As you found out in my last post, I am moving cross country soon. My goal is to move as little as possible. Therefore, I’ve been trying hard to not go to the grocery and to not replace any ingredients that I have run out of. This particular protein powder, has been a huge staple for me for over a year now. It is a main go-to ingredient when I need to inject a little satiety inducing protein boost into a recipe because it is just so versatile and can really complement so many flavors.
With that being said, not having it has really allowed to to flex my creative juices in a way. Disclaimer, if you see recipes using a lot of oh let’s say interesting ingredients, or similar ingredients this is why.
So without further ado, here is the recipe for the last bit of my vanilla protein powder. Once I move, you will certainly be seeing it more frequently in my recipes. Until then, though, I’ll have to make do with the things I have on hand!

- If starting with whole almonds, crush them to bits
- Combine all ingredients in a bowl.
- Use a spatula and stir in water slowly until the batter thins out
- Use spatula to fill silicon baking shapes
- Place silicon sheet flat in freezer for ~30 min or so until frozen.
- Pop out the bites and put them in a container and leave in freezer to enjoy when needed!
* batch size will depend on the size of your silicon tray.
