I was accepted into this group back in 2016, early into my blogging career. I was thrilled! My first recipe redux post was July of 2016 and was for the challenge of veggies! Here is that original challenge:
Get Your Fruits and Veggies in Shape
With produce galore, now’s a great time to enjoy lots of fruits and vegetables. Show us how you’re serving the bounty of gardens and orchards in shapes like ribbons, noodles, cut-outs, or other creative cuts.
As I love to use leftovers to create new recipes, and to make super quick and easy recipes, this one was no exception. I called it Clean out the fridge pho zoodles. Easy to whip together (**with leftover pho broth), clean, low carb and filled with veggies. Win!
That seems like ages ago. I was just finishing up my intern year and at the beginning of my residency when I wrote that first post and now I write you as I am finishing up my residency.
My ability to post has drastically decreased over the years, but I never missed the monthly redux challenge. Here are some of my favorite recipes I have posted for the Redux over the years.
