Time to share with you the last part of my Oregon/Washington trip. This time with a yummy raspberry mocha protein smoothie (or any berry that you might choose!). Full of protein and fiber, it is a deliciously cool way to keep you satisfied during these hot summer days!

So, I am not going to lie. I did not like Seattle NEARLY as much as I did Oregon. I think it was a great idea that we rented a car for this trip and were able to travel to the various areas, even in just Seattle. It is very spread out and think it would have been difficult to get around as easily as it would be in some other cities.
We got super lucky with accommodation as one of my friends (who I had met on a place about 11 years ago and we have stayed in touch every since- how cool is that?!) offered his home to us for the duration of our stay which was so awesome. We took him up on it and I definitely appreciated the offer. He gave great advice on things to do and where to do which was super helpful, as well.
Probably one of my favorite recommendations was Theo’s. Theo’s is a chocolate shop that I will forever recommend to people now if they are going. It is a chocolate shop that not only gives samples of there chocolates (like A LOT of samples), they have great chocolate and also give back to the communities in which the cocoa beans come from which is great. So, basically you are buying chocolate for a good cause! Win. They have super interesting flavors too so I highly recommend checking the shop out if you are in Seattle.
Speaking of cocoa, one of my other favorite finds out there was white coffee. Ok, not really all that related, but chocolate and coffee are 2 amazing things lol. Have you ever heard of it?! Your coffee is white instead of brown when you get it!! It apparently has to do with the roasting process and also packs more caffeine than your average cup of joe. We went to this TINY coffee shop and cafe one morning called A Spoonful of Sugar (AMAZING and HIGHLY RECOMMENDED) that introduced it to us. We got it with white chocolate and toasted coconut. Delicious. I just can’t even. So good haha. The food was really good, too!
Another cool place was Gasworks park. It used to be a gasification plant back in the day that was converted to a park. It had some great views and was huge. There were lots of people just hanging out, playing on the playground, taking pictures, having picnics and all sorts of things. It’s neat because you can still see the old plant.
Now there are some super touristy places there that we didn’t really go to because I wasn’t interested. These included things like the Space Needle and Pikes Place. I did go into Pikes Place and walked around, but honestly I find a lot of those types of places to be way overwhelming. I also wasn’t that impressed with the market. I much prefered Reading Terminal or the Italian Market in Philly (gosh I miss those places) to be honest.

Otherwise, there wasn’t much else around the central part of the city there that struck my fancy.
In terms of food, the best meal I had there was actually from a food truck that was outside of Chuck’s Hop Shop where they have brews on tap, but also hundreds of options in the coolers around the shop that you can buy and drink there. The Wood Shop BBQ was the food truck of the night and the pulled pork mac ‘n cheese was incredible. At first I wasn’t so sure about there being pickled onions on it, but whatever they are doing with that dish is amazing. I was craving it for weeks after eating it. I actually went back to get a second go at it, but alas 🙁 the food truck had left.
Overall, it was a great trip, but I really and truly loved the Oregon part better. Maybe one day I will find myself there permantely. Who knows! All I know is that I am about to be off on another adventure (this time to Scandanavia!) so if you have and recommendations please let me know!
Raspberry Mocha Protein Smoothie [Clean, Vegan, Low Carb, Glutenfree]
Smoothie for breakfast, quick snack or healthy dessert
Ingredients
- 1-1.5 cups cold coffee
- 1 scoop chocolate protein powder
- 1 cup frozen raspberries
- 1 T psyllium husk powder
- few dashes cinnamon
- 1 tray ice cubes
Instructions

Place the coffee in the bottom of the blender

Add the other ingredients on top and then blend until smooth

Pour into a glass if desired, eat and enjoy!
Recipe Notes
Feel free to top this smoothie with any toppings that you would like such as chocolate chips, coconut or whatever you might like!
