Yay for pumpkin season! What better way to celebrate than with pancakes. Look no further if you are in the mood for ~50 silver dollar sized protein pancakes all for yourself that are healthy and a lot less calorically dense than you might guess!
Time for the October Redux recipe challenge and it’s all about pumpkin spice. Read on for more!

Fresh from the Pumpkin Patch
Don’t forget to think beyond ‘pumpkin spice’ to all the ways you’re serving pumpkin these days. Of course, if pumpkin spice is what you’re craving – because it’s finally getting cold where you live, go pumpkin spice all the way.
I love pumpkin and am anxiously awaiting the price of canned pumpkin to drop so that I can LOAD UP AND EAT IT ALL YEAR ROUND!!!!!!! I have been saving my last can for a while now since I can’t bear not to have some of it around.
My plan once I get a house (maybe?) eventually or have more space I will get a HUGE freezer so that I can buy pumpkins, cut them up and have fresh (ok thawed from frozen) pumpkin year around instead. Alas, I don’t ever seem to have enough freezer space. One day, I plan on it. Until then, canned pumpkin all the way!!!
Now, lets get started with the pannnncakkkkkkeeesss!!!!! WOOT WOOT
Once you have the batter down it’s time to cook them! Helpful hint, you can add your chocolate chips/cranberries once you put the batter on the pan and before you flip them to ensure you have goodies on each pancake! (But, you don’t have to if you don’t want to!)
Keep pouring and flipping those pancakes until you are finished! I ate all of them myself, and since I like volume I make them silver dollar size. Feel free to make them as big, or small as you would like!

Pumpkin Cranberry & Chocolate Chip Protein Pancakes [Clean, GF, Vegan]
Ingredients
- 1/3 cup old fashioned oats ground into flour
- 1/2 t baking powder
- 2 T peanut flour
- several dashes pumpkin spice
- 1/4-1/3 cup pure pumpkin puree
- 1/2 T (more or less) chocolate chips
- 2 T (more or less) dried cranberries or handful of fresh/frozen
- water/liquid of choice
Instructions

Grind your oatmeal into a flour

Add the oat flour, baking powder, pumpkin spice, peanut flour into a bowl and mix

Add your pure pumpkin puree and slowly add your liquid of choice while stirring until a pancake batter consistency forms (see above for an example)

You can fold in your mix-ins at this time if you want, or you can add the cranberries and chocolate chips to the pancakes while they are cooking

Grease a large pan and heat it. Wait to place your pancake batter on it until it sizzles when you drop some water on it.

Once your pan is hot enough, drop spoonfuls of batter until there is no more space on the pan (top with a few mix-ins now if doing it at this time)

Wait for the bubbles to form before flipping your pancakes

Repeat until all your batter has been pancaked!

Eat and enjoy. Feel free to top with pure maple syrup or whatever you fancy!
