Trying to figure out something simple to make for Cinco De Mayo, or any other busy weekday night? Try this easy 4 ingredient slaw bowl. Chock full of fiber and protein and can be whipped up in a matter of minutes. What could be easier than that?! Put your leftovers to work.
I know the world we have been living in for the past couple of months would have seemed unfathomable just a short while ago. I hope you all are doing well and continue to stay safe, sane and healthy as we slowly creep towards reopening the world. I plan on interspersing this post with funnies (which is not unusual, am I right? to help put a smile on your face during these trying times.
I know it’s been hard to celebrate anything (yes I personally know this as I missed being able to celebrate both my birthday and my second birthday with the pandemic 🙁 ) , and even harder to celebrate a well-loved holiday when it falls on a week day!
However, I urge you to try to find some happiness in all of this, and share some moments with the ones you loved (with proper socially distancing , of course). You can still have a decent conversation, get-together 6 feet apart (even better if you’ve got masks on!). Don’t forget that. You don’t have to be totally isolated. There are people to talk to if you need someone. Phones can be a beautiful thing!
Now for this recipe, it’s super simple and really makes use of leftovers. My specialty as you know. Use any pork you have. Pulled pork is an excellent choice, but any will do! Try it out, it’s super simple and can be made in the microwave, or on the stove. You’re choice!

Ingredients
- 1/2 cup pork cooked
- 1 cup slaw
- ~1/3 cup salsa
- 1 T mozzarella cheese shredded and optional
Instructions

Microwave: 1. Put your slaw mix into a microwave safe bowl with a little bit of water and microwave on high for 1:30 minutes, or until soft.
2. Drain liquid
3. Mix in pork, salsa
4. Top with cheese (if using)
5. Microwave for another minute
5. Eat and enjoy!

Stove top: 1. Put slaw into pot and steam until tender
2. Mix in pork, salsa and cheese if using and cook until heated through and cheese is soft.
3. Eat and enjoy!
