PB&J Protein Blondies & Uruguay Part 3: Montevideo [Clean, Vegan, Grainfree, Low Carb, Glutenfree]

I know that we have had a short break from my update on my trip for the Sabra Hummus post and the May redux post, but now it’s time to get back into it since I know you are curious about that chicken trailer I was telling you about in the last trip update post (read it here if interested!)
So, to continue with this saga, we left Colonia De Sacramento and took the bus over to Montevideo. Since we were going to an organic farm North of the city, it took us a while to find the proper bus….annnndd the proper bus station. Alas, we did make it and started to walk the mile or so in the direction we thought was the farm.
Our hosts drove up next to us and pointed us in the right direction. We thought they would get there first, but nope, a few minutes later we passed them on the side of the road because their car had overheated! Needless to say, we beat them to their house. We spent the rest of the day just relaxing and exploring the farm. That night, the family made us homemade pizzas and salad from scratch! And everything but the pizza crust (although homemade) was from their garden! It was AWESOME. My stomach does not like pizza, but I personally love it so I ate a whole bunch of it (paid for it dearly later, but it was worth it).
We slept in the above chicken trailer, it was cozy for sure as it was small, but it was nice because it was screened in and had a mosquito net, but otherwise you felt like you were outside! It was the perfect temperature for it, too. PS. we saw other chicken trailers on our exploration of the farm, but they decidedly had actual chickens in them haha!
The next morning, the host made us an all organic, fresh from the farm breakfast. Aside from the flour, the bread was all homemade, including the jelly, and the honey was from the farm down the road. So cool. It was an amazing experience there and could have spent a few extra days there just getting my relaxation on. We were only there for a night though, so after breakfast we packed up and got back on the bus to explore Montevideo before our ferry left that day to go back to Argentina.
We spent a chunk of our time at the Decorative Arts Museum, pictured in the above 2 pictures. I LOVE french provincial, and french baroque style. I can’t wait to show you one of my favorite rooms in one of these old houses, but that will have to wait for an upcoming post since that was in Buenos Aires!
Before we left Uruguay, we decided to spend the rest of our Uruguayan money on a traditional parrilla. That translates to “grill”. Our special was awesome, we got this whole plate of grilled meats, with a half bottle of wine, a crunchy appetizer, a random side of french fries (?), and a dessert (alas it was a fruit cup, but I put most of it and its juices into my wine for a makeshift sangria!)
Finally it was time to go catch or ferry back to Argentina. We used Burquebus to get across. As I mentioned in my first post about the trip there are a few ferry companies that run. Burquebus is the largest, and my was it grand for a ferry!
It was almost like a mini cruise ship. It had currency exchange, a full store (with even a Victoria Secret part in it..?) that people were going nuts for. It was interesting to say the least.
They had a snack bar in the back of the main cabin that you could purchase food and drinks from. The ferry was quite clean, and a lot of that probably had to do with the fact that they made everyone wear shoe booties while on board!
So that sums up the Uruguay part of the trip. Up next is our time spent in Buenos Aires, Argentina! While you are waiting for that, try out these protein blondies, and/or here are some other treats/meals you can bring to your cookout if desired!
PB&J Protein Blondies [Clean, Vegan, Grainfree, Low Carb, Glutenfree]
Ingredients
- 1/2 c Peanut Flour
- 1 scoop Vanilla Protein Powder
- 1-2 T dried cherries
- few dashes cinnamon
- water or liquid of choice
Instructions

Preheat your oven to 350 degrees and grease a 8x8 (or a pan similar in size)

In a small bowl, mix together your peanut flour, protein powder, cinnamon first before mixing in your dried cherries.

Slowly add water or your liquid of choice until you get a batter that is a little bit thicker that a pancake batter.

Pour into your greased dish and bake for ~10 minutes (or until toothpick comes out clean).

Slice into pieces, eat and enjoy! Save leftovers in an airtight container in the fridge.
Recipe Notes
This recipe is easily expanded to make more bars!Â
If you have time, or feel like it, I would cut up the cherries into smaller pieces so that you have more cherry chunks in each bite!

It was called that because it was! It was meant to be for chickens. There were 2 other trailers around the property that had real chickens in it. Haha. Ours, however had never had chickens in it. Which is good lol
