Oman & A Raspberry PB&J Chocolate Chip Baked Protein Oatmeal Recipe [Clean, Vegan, GF]

One thing I knew I wanted to do was take a day trip to Oman, specifically the Khasab region to see the fjords. After doing research, I ended up going with Khasab Tours as they picked us up right from the hotel, provided round trip transportation, took care of the logistics of crossing both the UAE and Oman border as well as providing lunch, snacks and drinks during the excursion.
The pick up and drive over was very smooth, as were all of the border crossings. When we got there, we were directed to our boat and given welcome drinks of either tea or coffee. This was welcome heat as the weather was still sort of chilly in the morning and it was overcast.
We traveled through the fjords and a priority was given to dolphin watching. We got lucky and saw a ton! I have lots of videos which are so cool. While on the search, the men steering the boat gave us a lot of history of Oman and the people who live there and also on the government. It was very interesting.
We anchored for lunch next to a rock formation and while they were cooking, some people decided to go swimming. There were TONS of jellyfish just floating around, but I wanted to be able to say that I have gone swimming in the Arabian sea so I mustered up the courage and jumped overboard!
Thankfully, these ones did not sting (or at least didn’t sting hard enough to cause any pain. I TOUCHED ONE, and surprisingly..it was sticky and not jelly -like which really surprised me. The water was also really cold, so I didn’t stay in terribly long.
They had a wonderful spread of food for us. Man do I love a good hummus and roasted veggies and naan. They had other things as well including this really delicious savory yogurt dish. I think I might have to see if I can reproduce it. It seemed to have onion (maybe just onion powder..?) and lemon juice and maybe some pepper. It was delicious.
I also saw a very large sting ray! It was very cool. Once the excursion was over, we were brought back to the docks and got back into our van for the drive back. Unfortunately, our van broke down and we needed to wait for a replacement to come get us. HA. So I almost got stuck in Oman. While we were waiting (for hours lol without a bathroom which was difficult haha) we went to this fort that was near the water. So that entertained me for a little bit.
Trying to cross back into the UAE was also interesting. We got stuck behind these Indian men who I believe may have been trying to immigrate? Not sure, but they were trying to scan retinas I think, I don’t know but it was hilarious. I don’t know. Several of them couldn’t keep their eyes open and/or focus where they were supposed to and it was such an ordeal. They were trying to hold open their eyes. Quite funny. I thought about offering my service as a “professional eye opener”, but wasn’t sure if it would be humourous to them as it was to me. Anyway, after we finally made it across and back I would say it was an amazing day trip and would HIGHLY recommend it to anyone who is interested in these sorts of things.

Ingredients
- 1/3 Cup old fashioned oatmeal
- 2-4 T peanut flour
- few dashes cinnamon
- 1 T psyllium husk powder
- 15 chocolate chips
- ~1/2 T raspberry jam
- water/liquid of choice
Instructions

Preheat your oven to 350Β° and grease an oven safe bowl

Mix your oatmeal, peanut flour, psyllium husk powder, cinnamon and chocolate chips

Slowly add your liquid until the batter is to your desired consistency

Pour into your greased bowl and place in the oven for about 20-25 minutes, or until done

Spread the jam on the top, eat and enjoy!
Recipe Notes
The amount of liquid is your discretion and will also depend on how much peanut flour and psyllium husk powder you use. If your batter is too thin, it’s ok either add more oats, or just bake longer. It is a very forgiving recipe.

I love it too. There was a period of time when I ate PBJ every day (until I switched to PB and Banana haha). I love traveling so much. It really helps give me a break from the stress of everyday. I hope you get to travel soon! I’m guessing you’ll probably wait until your newborn is a bit older? I can’t wait to hear where you’ll end up going!
