Nordic Trip: Norway and an Apple Pie Protein Fritter Recipe [Clean, Vegan, GF]
Next country on the list is Norway. While you’re reading about that, try out these tasty apple pie protein fritters. They are a great way to start to use your apples, taste like apple pie, but are filled with satiating protein and fiber!
This is the third installment of my most recent trip. If you missed it, here is my first post on Iceland, and here is my second post on Denmark! Unfortunately, (or fortunately for my wallet) there was not a lot of time spent in Norway. Oslo was the only major city explored during this trip. I would have liked to visit a few others such as Bergen, but alas there was not time.
As I sort of mentioned, these countries are very expensive and Norway was the worst of the four. Therefore, to cut down on costs all meals and food came from the grocery store, or a deli. This made it much more affordable and to be honest they had some really great food in their little convenient stores over there. Ours need to step it up! From one, I got a large container salad with bit chunks of salmon, edamame, quinoa, barley, hummus and a few other things for 6 US dollars. It was so good, super filling and very reasonably priced. I should have taken a picture! (I suppose since snapchat doesn’t count. Whoops!)
I think one of the most interesting things to do their was walk up the roof of the opera house. It is constructed so that it is a series of ramps and if you walk up and around you are on the roof! Neat concept and there is a pretty good view. This is a view from one side of the roof. It overlooked the water. The sinking ship is actually an art fixture and on the left of the picture is a house boat that you could rent!
There was also an artillery museum that was free to explore and also an interesting visitors centre among the buildings of the Akershus Fortress. It started to pour on us during this time and it had plenty of information to read about during the wait for a break in the rain. It was like a mini museum in itself.

Try these healthy #protein fritters and read about #Oslo! #cleaneating #breakfast #vegan #travel Click To TweetThe city is pretty easy to walk around however a lot of the bigger “tourist destinations” would have been difficult to walk to and using public transportation would have been necessary. However, it is convenient that the train station and the bus depot (huge!) were within easy walking distance of each other.
You could hit features like the Royal Parliament, City Hall, the Oslo Cathedral, the main shopping streets and a few other areas (such a the above fortress, museum and Opera House) all in one day if need be. If you have any specific questions, please let me know. As with the other places, it was cooler than you may realize even in the summer and a rain jacket and layers are a must! Apple Pie Protein Fritter Recipe [Clean, Vegan, Glutenfree]
Healthy apple pie pancake recipe
Ingredients
- 1/3 cup old fashioned oatmeal ground
- 1/2-1 scoop vanilla protein powder
- 1/2 t baking powder
- few dashes cinnamon
- 1/2 apple diced
- 1/4 t butter extract
- water/liquid of choice
Instructions

Dice you apple and grind your oats into flour if you haven't already done so

Grease a pan and preheat

Mix your ground oats, vanilla protein powder, cinnamon and baking powder

Add your butter extract and apple

Slowly add your liquid until a thick batter forms (start low with 2T and work your way up)

Spoon out your batter into small silver dollar sized pancakes (or larger), wait unti you see the bubbles before flipping and continue to cook on the other side until done.

Continue with the rest of the batter until all is gone. Eat and enjoy!
Recipe Notes
There may seem like there is a lot of apple in here, it will be mostly apple! Don’t worry, it will stick together. Just be patient and don’t try to flip them too early.
