It is really easy to make and is more like a sweet bread with the additional coconut on top and vanilla protein powder. It is so delicious, I hope you try it! It’s also time for the next update. I hope you all enjoyed your weekend and your recent Labor Day! For those of you interested in hearing about the continuation of my trip, the next installment is about Denmark, predominatetly Copenhagen to be exact.
My initial flight was booked to Copenhagen actually and I just did Iceland on a stopover program (which stopover programs are probably one of those lesser known awesome traveling tips to see more places, please let me know if you want more information on them!).
There are many neighborhoods in Copenhagen, but we stayed in Norrebro . It was just across the river (a short walk from central Copenhagen and rented through AirBnB). Thankfully, the city is very walkable and the architecture is wonderful (although not the best of the trip). I promise things are not as far as they seem on a map.

If you go left at the docks you will get to the Hans Christian Andersen Little Mermaid sculpture. It was quite a walks away and decided instead to walk to the Black Diamond (the library which is very nice). Along the way, there were of all places along the water a set of in ground trampolines!!! How fun. I’ve never seen the likes elsewhere.
There is also a lot of history here. The Round Tower is here. The Christianborg Palace is beautiful and also are their many parks. This includes Tivoli which is their amusement park.
I did particularly like a market that is sort of like an indoor/outdoor food and farmers market. It is called Torvehallerne and is a whole block very close to the subway station. I highly recommend checking it out if you like those sorts of things. Now I leave you to this super easy rye protein bread recipe that can be great for breakfast, or snack. In fact, rye bread is a very popular bread (aside from the Danish of course although that’s not quite a bread), so I thought I’d try my own take on it. Don’t worry if you don’t like traditional rye bread, I bet it won’t taste as you expect it might thanks to no caraway seeds. Try it out and see!
Rye Protein Bread Recipe [Clean, Vegan]
Clean and vegan rye protein bread
Ingredients
- 1 cup rye flour
- 2 scoops vanilla protein powder
- 2 T psyllium husk powder
- few dashes cinnamon
- 1 t baking powder
- water/liquid of choice
- unsweetened shredded coconut optional
Instructions

Preheat oven to 350 degrees and grease a bread loaf pan

Place your rye flour, vanilla protein powder, psyllium, cinnamon and baking powder in a bowl and mix together

Add your water or liquid of choice until a batter forms

Use a spatula to scrape out the batter into your pregreased pan

Top with coconut if desired

Bake for about 20 minutes or until a toothpick comes out clean (don't overbake, or it will be dry)

Take out and let cool for a few minutes before transfering it to a wire cooling rack to cool completely before storing in an airtight container.

Slice and serve!
Recipe Notes
The amount of liquid you use will depend on whether or not you are using the psyllium husk powder and how absorbent your protein powder is.
