No Bake Chocolate Protein Cheesecake with Toasted Coconut [Low Carb, Gluten free, Clean] & Heat Stroke
Happy National Cheesecake Day! Today is a very exciting day for people who love cheesecake (like I do!!). If you are someone looking for a healthier DIY version then I present to you today’s new recipe! It’s packed with protein, is delicious and low carb to boot (if that is something you are concerned with). It’s the next installment of my no-bake frozen cheesecakes. It also is a great way to cool down after reading some important information on Heat stroke.
Today’s post is a combination of a tasty treat to cool down with and important information on Heat Stroke. This is not an all inclusive list of possibilities, but a general overview. If you have any question of if someone is having a heat stroke call 911 immediately, or get to the nearest emergency room ASAP since this is a life-threatening problem.
Since this is a really hot time of year, it’s important to remember to try and stay cool and be aware when you or someone you are with are being affected in a life-threatening way from the heat. Along the way I’ll give you a link back (click on the text) to my cheesecake posts from the past few years. Before we get started in on heat stroke, read this post on Heat Exhaustion, the precursor to heat stroke.
Symptoms
- High core body temperature
- Core is the key word here. (rectal temp) of 104 degrees F. This is really really hot and is the main sign of heat stroke and a main difference between heat exhaustion
- Hot, dry skin
- Heat exhaustion starts with cool , pale, clammy skin, but as the body gets hotter and starts to move more into heat stroke territory the skin becomes red (flushed), hot and dry (usually).
- Altered mental status
- This can include things like confusion, slurred speech, delirious behavior, seizure, passing out/coma
- The other signs can also be seen in heat exhaustion and include:
- Nausea/vomiting, rapid breathing, shallow breathing, headache, dizziness
Risk Factors
- Age
- The very young and adults over 65. The higher the age, the more at risk.
- Lack of hydration
- Staying hydrated in the heat is extremely important. You evaporate off a lot more fluid that you realize when it’s hot outside. Many people have difficulty staying hydrated so remember this aspect.
- Lack of cooling mechanisms
- Fans and proper use of windows/shades can do wonders!! Air conditiioning obviously can be a good source of cool air, as well.
- Exertion
- Any sort of exercise outside/exertion puts you at risk (especially if you aren’t hydrating!)
- Medications
- There are cetain meds that can put you more at risk. Please talk to your doctor about your medications, or read the safety profile of the medications that you are using.
- Certain health conditions
- Talk to your doctor about your chronic health concerns to see if they might put you at higher risk
- Prolonged heat exposure
- This could be indoors, or outdoors
- Drinking alcohol
- ESPECIALLY OUTSIDE IN THE HEAT. We can talk about the mechanism of action of alcohol if you want. But it is even more important to drink water and stay hydrated, or avoid it altogether in the heat.
Prevention
- Be mindful of the heat
- Stay hydrated (avoid alcohol if possible).
- Be careful exercising outside. If you can, do your exercise early in the morning, or later when it is cooler.
- Wear loose fitting clothes. Don’t wear too many layers, or too heavy of clothing
- Take extra precautions/be more mindful if you are taking medications, or have health conditions that put you at higher risk
Please take a minute to read through this and help someone who may be suffering from heat stroke. You could save their lives, and/or prevent permanent organ damage.
If you see someone suffering, try to cool them down, bring them inside/into the shade etc while calling 911 or getting them to your nearest ER.

No Bake Chocolate Protein Cheesecake with Toasted Coconut [Low Carb, Gluten free, Clean]
Ingredients
- 1/2 cup cottage cheese
- 1/2 scoop chocolate protein powder
- ~1/4 t coconut extract
- few dashes cinnamon
- 2 T unsweetened shredded coconut toasted
Instructions

Toast your coconut using your prefer method (just remember to keep a close eye on it as it toasts quickly!)

Put your cottage cheese, protein powder, coconut extract, cinnamon in the food processor and process until smooth.

Place 1T of the toasted coconut in the food processor and blend for only a second or two to mix.

(If you plan on presenting the cheesecake out of the dish, grease the ramekin now). Spoon out the cheesecake mix into the ramekin, top with the additional toasted coconut and place into the freezer for ~30 minutes

Take out when mostly hardended, flip out of the ramekin if presenting or just eat and enjoy if not!
Recipe Notes
I would start checking on the cheesecake at around 20 minutes, you don't want it to be rock solid. If it is, just let thaw for a minute, or two until you can eat it with a spoon/fork.

Great post! I had heat exhaustion when I was little, but thankfully never heat stroke.
I haven’t made cheesecake in years, but I really need to start doing that again soon–this looks awesome!
