I don’t know about you, but a long weekend sounds like a perfect pancake weekend! I’ve got a batch of mocha protein pancakes for you to whip up for your weekend brunch. They are low carb, grain free, egg free, vegan and clean to help you keep on track during your weekend.
Here is the latest odd conversation I have had lately. (Seems to happen a lot huh? haha)
I walk into the pre-operative area early in the morning to check on my patient before the time-out. (Short chat with the patient and everyone who will be in the operating room to re-confirm procedure, side, patient etc.) My upper level is sitting there close to the room and this is how our first words of the day played out.
Him: “You look sad today.”
Me: “Oh? Well maybe I am.”
Him: “I had a strange dream last night.” with a pointed look at me.
Me: Slightly alarmed since my intuitive nature sensed that it might have something to do with me gave him a one eyebrow’ed raised “Oh did you? What was it about?”
Him: “You died. You just..”
Me: Now for sure alarmed, “Wait, what? I died in your dream?!” Why was I in his dream and worse yet, why in the world did I die?
Him: “…of metastatic melanoma. You were here on this rotation in this hospital and then you just died. I think you had it and just didn’t tell anyone about it and then..you just one day died.” While shaking his head in concern.
Me: “Well gosh maybe this is why I look sad today! Because I’m just going to up and die.” Lol
That was the end of the conversation because it was time-out time. But, it had me perturbed all day. I don’t know about you, but I find dreams to be fascinating. Fact is, I’ve had several that have turned out to have actually happened. (Scary…eerie…I know) and perhaps this is why I’m that wary of it. Especially in the light of recent events, the fact that I just wrote a post recently about melanoma, the fact that I’ve had a family member die of melanoma and the fact that when I was last in the ICU I took care of a guy younger than I was who was soon going to die of metastatic melanoma really just rattled me a bit.
Honestly, I’m hoping that it’s just because we make such a great team (well at least I think so) and he’s subconsciously sad that I’m leaving for my next rotation hehe 😉
Speaking of leaving, I’m heading out on vacation in a few days so I’ll be MIA for a bit. Hopefully, I’ll be able to get back to you right after, but I start back on a rough rotation and a brutal call schedule. I’m desperately hoping I’ll have time, but it’s been really hard to keep up lately, but I’ll try my best! As long as I make it back from vacation and don’t end up meeting my fate haha. Don’t worry, I’ll be sure to pack my sunscreen 😉

Mocha Protein Pancakes
Ingredients
- 1/4 cup almond flour
- 1/2 scoop chocolate protein powder
- 1/4 t almond extract
- 1/2 t instant coffee
- dash cinnamon
- 1 T flaxseed, ground
- 1 t baking powder
- 1/4-1/2 c coffee (depending on how absorbent your protein powder is)
Instructions

Grease and preheat your pan (you want it to sizzle when you toss a bit of water on it)

Mix all of your dry ingredients together in a bowl (I use a measuring cup)

Add your liquid slowly while stirring until pancake consistency (you want it to be a bit runny)

Spoon out your pancakes into what ever size/shape you would prefer

Cook until you see bubbles and flip.

Continue until all the mix is used

Eat and enjoy!
Recipe Notes
The amount of pancakes you get will depend on the size. I prefer to make silver dollar size so that I can eat A LOT of pancakes ?

Your protein pancakes look so good! I wish I saw these this past weekend, I would have loved them yesterday! Stupid schoolwork is always getting in the way of basically everything lately. I’m definitely trying next weekend!
Haha thanks. I’ve been told that I am very expressive when I talk and tell stories so the pictures are a great representation of me (my personality at least hehe). They were yummy! I hope your schoolwork calmed down a bit and were able to try these this past weekend! It’s never great when things like school (other obligations get in the way of things that you want to do!)
Ah how do you make gluten-free pancakes looks like that??? Whenever I make them they don’t turn out… they taste fine, they are just so ugly ;p
That dream is interesting, but I used to be really into dream interpretation and generally speaking, a dream of death actually signifies re-birth. And if you say you are leaving this rotation for a new one, it makes total sense. Dreams don’t necessarily carry over exactly as they play out, they get embedded in our brains and need to be translated. Some who believe that dreams come true believe that it’s more a case of self-fulfilling prophecy. We think about something so much, we end up dreaming about it and it plays out in reality as well. But that’s just my two cents 😉

Haha I have had pancakes for sure turn out less than appealing but so tasty and you are just like…man these are so good but no one would likely believe me by the looks of them haha. I would have to say the consistency of the batter is pretty key, at least for me? Having the baking powder helps too! Ok good, that’s what I was hoping it was referring too! Dreams really are fascinating. I really appreciate you sharing your two cents! I did enjoy my vacation, thanks!
