Beat the heat with your slow cooker during the summer with this lentil stew! It’s clean, vegan and only takes 5 ingredients. Just throw all the ingredients into your slow cooker and let it do all the work without heating up the house!

Beat the Heat with the Slow Cooker/Instant Pot/Pressure Cooker
Whether you go slow or fast, just don’t turn on the oven. Show us how to keep the kitchen cool by using one of these appliances: Slow cooker, instant pot, pressure cooker.
I can definitely relate to why people don’t want to turn on the oven during the hot summer months, particularly if you don’t have any air conditioning. Here it’s usually over 100 degrees and super humid. So, I often just want something really cool to eat (watermelon and salads I am looking at you haha).
However, occasionally, I’ll still want a hot meal. This is particularly the case for lunch. I am often freezing in the office, or while operating so I tend to drink a lot of hot coffee and want hot food to warm up!
This recipe that I’ve got for you today can be made stove top, in or the slow cooker. Slow cookers are amazing for their ability to just throw ingredients in, turn it on and leave it to do it’s magic! If you don’t have a slow cooker, or don’t use one frequently I think you should for sure invest in one!
Once you realize how much you like them, go ahead and check out the other slow cooker (or pressure cooker/rice cooker) recipes that my fellow reduxer’s came up with to beat the heat!
Lentil Bean and Collard Greens Stew [Clean, Vegan, GF]
Ingredients
- 1 cup lentils
- 1 cup black beans
- 1/2 onion diced
- few dashes creole seasoning
- 1 can collard greens
- 4 cups water/broth of choice
Instructions

Chop onion

Add all ingredients except for the collard greens into the slow cooker.

Cook on high for at least 6-8 hours or until all ingredients are cooked through, adding the collard greens for the last half hour or so.
Recipe Notes
I used about 1 T creole seasoning. Feel free to adjust to taste, and/or add it in at the end.
