This post is a combo travel and recipe post. Make these flourless fudgy apricot protein muffins from this quick and easy recipe. They are vegan, gluten free and clean and perfect for breakfast (eat a couple) or a quick snack! Meanwhile, sit back with your muffins while reading up on what to do in Bermuda should you find yourself there on the off season.

Traveling to a country during its off-season has its pros and cons and Bermuda is no exception. However, I would suggest that I think it might actually be MUCH better in the off season if you are looking for more than just laying on the beach (not something to do during the off season BTW). So, if you want to explore all that the island has to offer, especially during the off-season then bookmark and/or read this while enjoying one of these fresh muffins!

Where to Stay

I can only comment on where we stayed which was the Grotto Bay Resort. This was a lovely little place that was relatively close to the airport, bus station and also has all-inclusive options. We did not do the all-inclusive part because there were a lot of restaurants around the island to eat (next post will be places to eat). However, this would be a particularly good option if you were there on the on-season.

They have a concierge desk that can help make reservations for you and also they have a free afternoon tea every day for guests! This was awesome. They had a variety of teas and also coffee along with an assortment of cookies, scones and breads. A wonderful afternoon activity. They also have a weekly Sunday night comedian that comes in (just ok) and a Monday night Manager Cocktail party with free (and awesome) appetizers and rum swizzle drinks (the island’s speciality).

What to do first

Get a bus pass!!! Trust me it is worth it. You will spend a lot of time of the bus, but it will save you a lot of money in the long run. The main bus depot is in Hamilton, and I would recommend you get your bus pass there because you can use your credit card. (The hotel will only accept cash). So, if you are trying to save cash, Hamilton is definitely the place to get it. Just a tip, but this is also good for the ferry! Which I would recommend to cut down on transportation time.

Let’s break down the areas

The Dockyards

This is on the far side of the island. Use your bus pass from the ferry in Hamilton to get here more quickly.

Things to do:

  • The National Museum of Bermuda
    • Walk around the grounds and view the Commissioner’s House
    • If interested, there are also Dolphin programs on the premises.
    • There is a building devoted to shipwrecks
    • There is an area for boats
    • You can walk around and view the cannons and forts defenses

Other things to do around the Dockyards:

  • There are a few artist’s markets there
  • An awesome glass blower market (they hold demonstrations and also rum cake tastings!)
  • An awesome pottery shop
  • A few clothing stores to look in
  • A mall with various shops

You can probably do all of the Dockyards in a day if desired in the off season.

South Hampton

This is where the famous Fairmount Hotel is. We spent an afternoon here just exploring the hotel. Of note, it is pretty isolated. This may be what you are looking for, though. It has a wonderful breakfast area overlooking the bay and a private ferry, too. It was fun looking around the hotel and the shops while waiting for dinner (to be discussed in the next post). PS They also have a very famous lighthouse (Gibbs) nearby that is easy to get to. I didn’t get the chance to visit it, but I’m told it gives a great overlook of the ocean and surrounding island.

This is also where we went to Horseshoe Bay and explored the beaches around this area. There is a bus stop close by and you can walk along several beaches. If you are looking to windsurf, this is the area to do it. (You’ll need a wet suit during the off-seaon though).

Hamilton

Hamilton is separated into different areas. For example, Grotto Bay (where I stayed is a section of Hamilton)

Within Grotto Bay there is Crystal Caves. I didn’t go to these caves since Grotto Bay resort has its own caves, the Cathedral Caves. I thought this was a good example of the caves that Bermuda has to offer. You can swim in the Cathedral caves, and also explore behind them. Here is a sneak peak of what they look like.

Just about 10 minutes of a bus ride away from Grotto Bay is the Aquarium and Zoo. It isn’t that big, but it does have Tamarins!!! It can be a fun quick thing to do if you like going to aquariums and zoos!

Hamilton proper is also fun to walk around. Along Front street is where the high end shops are and there are other shops around the area too. On Wednesdays there is a “Wine Down Wednesdays” which I fully recommend. It changes locations, but ours was in Hamilton. They sampled different wines (reds, whites and a sparkling) and you can buy the bottles afterwards if you enjoyed any of them. It was 30 dollars for unlimited glasses. Such a good price especially in a place like Bermuda. ( Just in ase you were curious, Bermuda dollars are 1:1 to US Dollars and US dollars are accepted without a any problems there).

St. George’s

This is the old historic part of town. On Wednesday’s there is a free tour of the old town by the town crier. This is a great free tour that gives you some history of the town and also shows some of the old punishments as well (including a dunking in the river). Here you can see the town hall, some of the oldest buildings and St. Peters church.

Up behind all of these central old historic town places is the unfinished church, which is a relic of a beautiful church that was only partially completed.

Even further past this is Tobacco Bay. There were people snorkeling here when were were there. Just a bit past this Bay is Fort St. Catherine’s too if that is something you are interested in exploring.

You can spend a day in each area if you want and can get around the whole island and explore all that it has to offer. Stay tuned for some delicious eats in the next post! Flourless Fudgy Apricot Protein Muffins [Clean, Vegan, Glutenfree]

Cook Time 15 minutes
Total Time 20 minutes
Servings 8 muffins

Ingredients

  • 1 cup old fashioned oats ground to flour
  • 1 scoop chocolate protein powder
  • 1 T psyllium husk powder
  • 1 t baking powder
  • 1 T cocoa powder
  • few dashes cinnamon
  • 2 T apricot preserves *sugarfree
  • water/liquid of choice

Instructions

  1. Preheat the oven to 350 degrees

  2. Grease a muffin tin

  3. Mix the oatmeal flour, chocolate protein powder, cocoa powder, cinnamon, psyllium husk in a bowl.

  4. Mix in the apricot preserves

  5. Slowly add your liquid of choice (I just used water) until a batter forms

  6. Spread out the batter into 8 muffins tins

  7. Bake for 15 minutes or until a toothpick comes out clean

  8. Eat and enjoy. Keep leftover muffins in an airtight container.

  1. I love visiting places in the off season. Question about the muffins, what could I substitute for the psyllium husk?

    1. Do you have any favorite places that you would recommend visiting in the off season? I am always looking for travel ideas! Honestly, it’s just great for volume, density and fiber. You could leave it out if desired, just make sure not to make the batter too wet. Alternatively, you could add some ground flax (would change the flavor though) or even some chia seeds would likely work, as well.

  2. Love that these have apricot in them as it’s one of the foods I was trying to enjoy more of.
    The trip looks amazing and loving those purple flowers!
