Flourless Coconut Protein Muffins [Clean, Vegan, GF] ...And A Dash of Cinnamon

You only need 5 ingredients to make these clean, vegan and gluten free flourless coconut protein muffins. They only take about 5 minutes to whip up and 20 minutes to bake. OMG I have been so crazy busy I can’t believe I am only now just starting to tell you about my last vacation! Man, it was a good one. I like to alternate my high adventure trips (like my last one to Ecuador which you can read about some of the high adventure here, the lodge here, the hiking and rainforest here) with chill/relaxing/beach trips. This time up was a nice beach trip! I decided on Belize as my destination. I’d never been to Central America before this trip and really wanted to check it out!

This time I stayed in a super lovely tiny all-inclusive resort called Belizean Dreams. It was perfect for the peaceful, relaxing vacation that I was looking for. I’ve stayed in all-inclusive resorts before and am a huge fan, however there was definitely something more exclusive to this one. Why? I think because it was so small. There were only 9 villas, only one place to eat, only 1 bar and no crazy shows, loud music, spring breakers etc. It was AMAZING. Let me show you!

I think that was the first time I experienced an open shower like that. It was strange. Have you ever used an open shower? What are your thoughts on it?

This was pretty much the extent of the resort. See how small? I loved how secluded it was. I think it made things so much more personal. I got to know a lot of the staff really well and they make an effort to know your name and your preferences.

No buffet style at this all-inclusive. There was a set breakfast/lunch/snack menu although there were daily specials for lunch and a new dinner menu every night. The portions were very appropriate and manageable. Everything was fresh and delicious. I was very pleased with the meals we had there. So much so that we did not venture out to eat any where else except one lunch where an ex-pat liked me so much that she wanted to make me her special fried chicken and wanted me to meet her other friends. That was an interesting lunch to say the least and super random I know. Even a bit sketch perhaps since she sent some random guy to come pick us up…uh haha. I’ve got plenty of stories about this vacation to tell you about, but will have to be piece -meal like always. Also, like always, you’ll hear more of my ridiculous life stories.

Don’t mind my feet ;). The bartenders here were awesome. I came up with a drink and asked them to make it, to which they happily obliged. Thank goodness because it was so so tasty and I drank it pretty much the entire week lol. They also weren’t stingy either which is always nice. The local stuff was included, however all the imports were extra. Just FYI.

Now I made my drink with a lot of coconut, and I love coconut, so I decided to base a recipe with lots of coconut! It’s key to put some coconut on top so that it gets all nice and toasty when baking!

Flourless Coconut Protein Muffins [Clean, Vegan, GF]

Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 2/3 cup old fashioned oatmeal
  • 1/4 cup unsweetened shredded coconut (with extra for topping)
  • 1 scoop vanilla protein powder
  • 1/2 t baking powder
  • few dashes cinnamon
  • water/liquid of choice

Instructions

  1. Preheat your oven to 350 degrees and grease 6 muffins tins

  2. Grind your oatmeal into a flour and add it into a bowl

  3. Mix your shredded coconut, vanilla protein powder, cinnamon,and baking powder with the oatmeal

  4. Add your liquid of choice until your batter thins. You want it to be formed enough to be stable on your spoon or spatula when transferring to the muffin tins, but thin enough not to be able to form it with your fingers if you were to touch the batter.

  5. Once fully mixed, place the batter into your greased muffin tins. Top with extra coconut and bake for about 20 minutes, or until your toothpick comes out clean.

  6. Once finished cooking, remove from the oven and let cool for a couple minutes before transferring to a cooling rack. 

  7. Eat and enjoy! Store any leftovers in the fridge in an airtight container

Recipe Notes

  • I use a coffee grinder to grind my oats. Feel free to use that or a food processor
  • I used water for the liquid, but feel free to use any milk of choice
  • The amount of liquid you need with depend on how absorbent your protein powder is, which is why I never give exact amounts. You will likely need around 1/2 cup of liquid.
  • I greased my muffin tins with coconut oil to enhance the coconut flavor, but feel free to grease your tins with whatever you have on hand

  1. If you put coconut on something, I’ll eat it. Your muffins look so yummy and thinking I could eat them as a snack after working out.
    Oh man, your vaca pics!! I’ve always wanted to go to Belize, like for the last 20 years. My brother is living in Guatemala right now and owns a pizza restaurant there, so I’m thinking of visiting him and hopping over to Belize while I’m there. I’m looking up that resort because it totally looks like my kind of place.
    Also, I’ve done a lot of crazy things for fried chicken but never got into a car with some random guy! hahahahahaha! Glad y’all are safe 🙂

    1. Yeah, I’m right there with you! I love coconut (well, raw and unsweetened) but this is really more of a new love for me that I’ve developed over the last few years (I’m thinking it’s because I was only exposed to the sweetened variety growing up and am not a fan). OMG I would love to go Guatemala! You are right, they are right next to each other and you for sure should take advantage of having your brother there! I would FOR SURE check out the resort I stayed at. It was awesome. Yeah, it was an incredibly random afternoon for that fried chicken adventure. Very strange but I will admit the chicken was quite tasty!

  3. Oh my gosh!!!! Your trip sounds AMAZING. I love that you stayed at a smaller, more intimate resort. I have always shied away from resorts as they just sound too busy and loud. This is definitely my speed. It looks so gorgeous there. It sounds like you had a wonderful time =)

    1. It was so amazing. I can’t wait to share more of it with you. It was so perfect. I really needed a break but still wanted the all-inclusive part so I wouldn’t have to think about much. However, I didn’t want the loud craziness of other all inclusives that I’ve been to. I’d highly recommend this place. I thin you would like it a lot! It was so gorgeous. They are great to make in a big batch and have on hand. I just made another variety and did the same thing, I can’t wait to share those too because man..they were tasty!
