Dorm Room Edition: Snack Round Up with Chocolate Protein Pumpkin Mug Muffin [Clean, Low Carb, GF]
Snack time? Try out some of these easy to make in your dorm room snacks to tide you over until mealtime. This chocolate pumpkin protein muffin takes only a few minutes and a few ingredients to make. All you need is a microwave!
Welcome back to the dorm room edition round up! We had to take a quick break for the recipe redux post last week. This round up is to showcase some recipes that you can make with limited equipment such as you might find in a dorm room! We’ve covered some simple breakfast recipes in this post and lunch idea with this post. Now it is time to try out a few snack recipes. We’ll start off with some sweet snacks and then finish up with some savory ideas!

This first one is perfect for your sweet pumpkin cravings. It is a great post workout snack, too! It tastes a lot like the filling of pumpkin pie, but is healthy!
Up next we have a 4 ingredient no-bake chocolate chip cookie ball recipe from Family Food on the table. It does need a food processor to make, but tastes like a chocolate chip cookie!
Don’t have food processor, but still want to make some oatmeal balls? Try out these oatmeal peanut butter protein balls! They are clean, vegan and gluten-free and don’t require any equipment.
Or, how about a healthier cookie bar? This recipe from Food Family on the Table calls for melting on the stove. If you have a hot plate you could use that, but I think you could also melt and mix the needed ingredients carefully in the microwave. Try it out!
This next one can serve as a quick breakfast (add a healthy fat! like a nut butter), snack or even dessert! Who says making your own english muffins are hard? Less than 5 minutes is all it takes to cook up this quick snack.

Finally, this last one only needs 2 simple ingredients! Popcorn and hot sauce! It’s super easy and is a clean savory treat that is packed with fiber.

Dorm Room Edition: Snack Round Up with Chocolate Protein Pumpkin Mug Muffin [Clean, Low Carb, GF]
Ingredients
- 2 T coconut flour
- few dashes cinnamon
- 3/4 -1 scoop chocolate protein powder
- 2 T pure pumpkin puree
- water/liquid
Instructions

Add the coconut flour, cinnamon, chocolate protein powder in a bowl and mix

Then mix in the pure pumpkin puree.

Finally, slowly add water until a smooth batter forms

Grease a ramekin or small microwaveable safe bowl and transfer the batter to the ramekin

Place in the microwave for about 1.5 minutes

Carefully take out, eat and enjoy! (As long as it is cool enough not to burn your mouth!)
Recipe Notes
Coconut flour sucks up a lot of liquid so you will likely need a bit more than expected. the amount of liquid you add will depend on how absorpent your flour and protein powder are. Just add your liquid slowly.
