Clean Beef and Bean Egg Bowl & Uruguay Part 1: Getting There [Clean, Low Carb, Gluten-free, Grain free]
Looking for a recipe with a Southwestern flair? Try out this easy, less than 10 ingredient egg bowl. Feel free to make it into an egg scramble if desired! Packed full of protein and fiber, this dish will make for a satisfying meal.
I’ve been so busy lately with my other obligations (mostly work, of course) that I haven’t had time to tell you about some of the awesome trips I have taken over the past few months! I’ve gotten wonderfully lucky and have been able to travel a few times already this year. My first trip took me to Uruguay and Argentina! This post will focus on the Uruguay bit and then I’ll move onto the Argentina part in upcoming posts!
I went with a friend of mine and we were great travel partners! Even better because she speaks fluent Spanish and I only speak un poco (hehe). We took an overnight flight and thought we had given ourselves enough time to get to the port since our plan was to fly into Buenos Aires and then immediately get onto the boat to go to Uruguay.
Based on that intro, you should realize that we were wrong. LOL! Customs took FOREVER to get through. Almost 2 hours. That was our first problem. We had given ourselves 2.5 hours to get to the dock. We got an UBER (the best/safest way to get a ride in Buenos Aires) to the dock. It took 40 minutes to get there…. we had 30 minutes until our ticket said the doors closed. First problem.
So we were speeding along until I heard a very odd rattling sound. Turns out he got A FLAT right there. (UBER is not up to the same standards as it is here in the US, by the way). Thankfully, he knew how to change his own tire, but obviously I was really stressed out. Then, when we got closer he had to stop to ask for directions. Finally, we just got out and ran there.
Somehow we got incredibly lucky and they were behind schedule and let us on! They were a bit suspicious since we had literally just gotten our passports stamped for entering the country and then we got them exiting a mere hour, or two after, haha. We were on a little boat and it took a little over an hour to get to Uruguay. Our destination? Colonia del Sacramento.
Colonia del Sacramento is a quaint historic town that makes for an excellent day/weekend trip. We spent a little over a day there. It is a UNESCO World Heritage Site, too so I would try to see it if you are in the area! Like I said, it is an easy day trip from Buenos Aires. I would recommend buying your tickets ahead of time, online, so you don’t have to worry about buying them in a foreign country. There are a few different companies that run daily ferries between the two cities. We used Colonia Express to get there. Nothing special, but it worked with our time frame and wasn’t very expensive.

Ingredients
- 1-2 eggs scrambled
- 1/2 cup cooked ground beef
- handful cherry tomatoes sliced
- 2 T black beans drained
Toppings
- Hot sauce
- salsa
Instructions

This recipe can be whipped up in a number of different ways. You can keep things separate, as shown in the picture, or scramble all ingredients together

If separate: brown meat and drain if not already cooked and set aside. Scramble eggs using your preferred method. Add to a bowl, top with the meat, tomatoes, beans and optional hot sauce and salsa. Eat and enjoy!

If together: Brown meat and drain if not already cooked. Place your beans and tomatoes in the pan. Top with eggs and scramble until cooked through. Place in a bowl and top with optional hot sauce and salsa

This makes one bowl. This recipe can be easily expanded to make more than one bowl. It can be an easy meal prep meal, or made for the entire family!

It’s an awesome place. I only got to explore Buenos Aires (more about that in an upcoming post) but it’s such a huge and diverse country. If I can, I’d like to be able to go back and see more of it. I hope you get a change to go one day and to try out the recipe!!
