Hello all! I know it’s been a long while since I was last able to get up a post. A lot has happened between then and now. There is a lot I want to update you on (including an epic road trip centered around Western National Parks. Amazing. I can’t wait to update you and hopefully give you inspiration for upcoming, socially distanced trips of your own).
There are so many things that I want to share with you guys, but I just haven’t had the time. This is mainly due to the craziness of work and the fact that I was trying to study for my written boards which I took last week. Fingers crossed all went well.

Click To TweetSomehow, even though it is a computer based test, I still have to wait 8 whole weeks to figure out if I passed. If so, then I need to start studying for the oral boards. Ugh. I would seriously love for all the testing to finally be over. I feel like my whole life has just been studying for one test, or another. Terrible. I would really like to actually start living a life.
As you may already realize, things are quite tense in the medical world on many different levels. I hope that each and every one of you have been able to remain safe and healthy through these trying times. I am hopeful that this will make/has made people more willing to be supportive of one another and care more for others and what they may be going through.
As I try to prepare some of my awesome trip recap for you. I will leave you with a super delicious and easy recipe that I hope you can make use of during this fall (?) season. (? Because it has somehow gone back to being 80 degrees when I write this so am still uncertain if it is turn-on-the-oven-whenever-I-can sort of weather. Even stranger since I legit had the heat on just a few days ago because it was high of 50 and low of 30 for a while there.) Chocolate Chip Sweet Potato Protein Cookies [Clean, Vegan, Gluten Free, Paleo]
Healthy Breakfast (or anytime!) cookies. Full of protein and vitamins
Ingredients
- 1 medium sweet potato cooked
- 1 scoop vanilla protein powder
- 1 t psyllium husk powder
- 1/2 t baking powder
- few dashes cinnamon
- 1 handful chocolate chips
- 1 t vanilla extract
- liquid of choice
Instructions

If you don't already have a cooked sweet potato you can cook one quickly by stabbing it with a fork and cooking it in the microwave for 5 minutes (or until soft)

Preheat your oven to 350 degrees and grease a cookie sheet

Mash up your sweet potato in a bowl

Add your protein powder, psyllium, baking powder, cinnamon, vanilla extract and combine until mixed (add liquid of choice tablespoon by tablespoon if needed until a dough is formed)

Fold in your chocolate chips (use as many or few as you would like)

Once mixed, separate out and flatten into cookies (these will not go far, so feel free to lay them out in as big or little of a cookie as you prefer)

Cook for ~10 minutes and then eat and enjoy! These will store in an airtight container in the fridge for about 5 days (but I always eat them in one sitting 🙂 )
