How is it already time for fall? It certainly doesn’t feel like fall down here (hello 95 degrees and 100% humidity at 630 AM still). Remind me when I am considering moving to pick some place less humid. My hair and skin in particular don’t play well with it. Anywho I’m getting off track! Sorry about that. Time to take a break from the college room recipe idea round up to  give you this month’s recipe redux challenge.  Here is this month’s prompt.

For that challenge I gave you my beloved oatmeal peanut butter protein balls. Made with only 5 ingredients, they are healthy and easy to make with your household ingredients.

In that post I also described my childhood food memories. I talked about how I ate a lot of packaged food….which I don’t prefer to eat now. So, this post is a redux on a breakfast (or snack) I ate as a kid. Remember the flavored, instant Quaker’s oatmeal packets? Probably. (Anyone use to eat the Dino egg one when they were younger? Lol). Well I partícularly liked the peaches and cream (here’s a redux healthy version of a baked peaches and cream protein oatmeal I made previously.) Ok ok here’s a drool worthy picture of it!

I know I’m still a kid and prefer to eat my food with my fingers. Judge me all you’d like. Lol.

The other flavor I really liked was the apples & Cinnamon one. So,  I decided to play off of that. I added a love of mine (chocolate) to change things up and viola I present a healthy, voluminous, no sugar added, slightly tweaked version of the apples and cinnamon oatmeal.

Chocolate Apple Cinnamon Protein Oatmeal [Clean, Vegan, GF]

Chocolate Apple Cinnamon Protein Oatmeal [Clean, Vegan, GF]

Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 1/3 cup old fashioned oatmeal
  • 1/2 scoop chocolate protein powder
  • 1/2 apple diced
  • few dashes cinnamon
  • 1 T psyllium husk powder
  • water/liquid of choice

Instructions

  1. Dice your apple.

  2. Cook your oatmeal using your preferred method. It is very important though to put your diced apple (sprinkle with cinnamon) in the bottom of your bowl or pot when cooking.

  3. After you are done cooking the oatmeal, let it cool for a few minutes before stirring in your additional cinnamon, chocolate protein powder and psyllium husk powder.

  4. Feel  free  to let it cool off further if you want it to thicken up more (or make the night before for a  really thick oatmeal in the morning!). Eat and enjoy

Recipe Notes

The amount of liquid will depend on how thick you like it, and how absorbent your protein powder is and if you are using  the psyllium husk powder. You can  base  it off your package (I  generally add a lot more water than directed because I like really volumious oats and thicken it with the  help of the above ingredients)

Don't have chocolate protein  powder? Feel  free  to use vanilla instead (or add your vanilla with a bit of cocoa/cacao  powder)

  1. With these cooler temps I’m really in an oatmeal mood! I had cinnamon raisin and cinnamon apple and both hit the spot. I have to say I’m intreigued by the chocolate protein powder in the recipe, I’ve done vanilla and peanut butter but I can’t remember the last time I had chocolate and apples.

    1. I’m glad you’re having cooler temps! I’m simulating fall with this recipe down here. It’s still 95 degrees!! You should try out the chocolate bit! It just changes it up a bit and chocolate for breakfast is always a win in my book.
