I know it’s been awhile since my last post, but things have been crazy for me lately. I’ve moved…again. This makes 4 moves this year!! I’ve started a new job (real life here I come finally I suppose) in an entirely new place and I’m still trying to get settled.
I now live in small town Midwest, which is a whole lot different from the big city living I’ve been used to. I’m trying to start anew, though. I’m finally at a point in my life where I can start trying to really be and express who I am. I have donated a lot the mismatched furniture I’ve been toting around since college. Most of those things were things I rescued off the streets, to be honest. Also to be honest, ok ok I do still have a lot of those things, although I’ve redecorated/redone then in my free time!
I’ve been spending my last few weeks trying to buy furniture for my new place and I finally have a comforter to sleep in my bed!! Woot! Very exciting haha. I have bar stools coming which will be great as my only chair currently is a ladder that I bought to reach my top shelves haha.
I’m also trying to get used to this new place I’m in. I’ve loving how close everything in and how non-exisitent traffic is! (Major win!) However, trying to learn the new clinic, EHR, people etc has been very overwhelming to say the least. Thankfully, it gets a little bit familar with each day that passes.
The people here are incredibly nice too, which helps so much. Unfortunately, that wasn’t the norm over the past almost decade of where I’ve been so I’m very grateful for that. It makes doing what I’m supposed to be doing easier.
On another note, Thanksgiving is almost upon us and it is my VERY FAVORITE holiday!!! I am super excited because my (most of my) family is making the long trip out to see me for the occasion and I am so very pleased. I cannot wait to see them and have stocked up with things that they like for the occasion. It’s strange trying to shop for things you never ever buy haha. I even had to try more than one store to find some olives for my sister lol.
So, I’ve got a pumpkin baked oatmeal recipe that you can make for yourself with the pumpkin I’m sure you’ve stocked up on, or increase the measuremeasts if you need a quick and easy breakfast fit for a crowd! Meanwhile here are a few clean and easy Thanksgiving recipes you can whip up quickly if you need some inspiration.
Chocolate Almond Butter Pumpkin Protein Pancakes [Clean, Vegan, GF]
Ingredients
- 1/3 cup old fashioned oatmeal
- 1/4 cup pumpkin puree
- 1/2 scoop protein powder
- 1 T almond butter
- few dashes cinnamon
- 1 t baking soda
- water/liquid of choice
Instructions

Grease and preheat your pan or skillet

Mix oatmeal, pumpkin, protein powder, almond butter, cinnamon and baking powder in a mixing bowl

Slowly add water or liquid of choice until batter consistency forms

Add a spoonful of batter to the pan until it bubbles. Then flip and cook until done

Eat and enjoy with some maple syrup if desired once all the batter is cooked through!
Recipe Notes
If vegan and gluten free make sure to choose oatmeal and protein powder that works with your diet.
The amount of pancakes made depends on how big your pancakes are. I like silver dollar size as it allows me to eat more pancakes!
This recipe is easily multplied to make enough for more than one person!

We are all about using oatmeal for a base right now with Baby G and me nursing. I make him little pancakes like this but instead of protein use eggs. I think I’ll make a batch myself this week swapping out the eggs for protein to make your version and give me an added nutritional boost.
