I am pumped about this protein “Ice Cream” I am going to share with you. Granted, I call it a smoothie, but I like mine thick enough to eat with a spoon. So really, if you are looking for a healthy alternative to a soft-serve styled ice cream, then this recipe is for you! This makes a huge volume, but it doesn’t break any calorie bank so this is my sort of recipe! Packed with protein it is also vegan, low carb, clean and gluten free! It takes only a minute to make, so it’s perfect to make at any time. Use it for a post workout snack, anytime snack or even dessert 🙂
So I am pumped to share this post with you for a couple different reasons. First of is that I am loving making this healthy “ice cream”. I love the enormous volume it makes (I’m talking 6-7 cups worth for a mere ~<200 calories and whopping ~20-30 grams of protein if you are into counting. Halo top can’t even beat those stats)!!
The other piece of good news is that somehow I am onto my last year of residency! Whooo!! I’m not sure where this past year went, but I am quite excited to be almost done with this very long trek.
It would be nice to be done though! It’s hard when almost all of my medical school friends have just graduated from residency (as most are 3 years long) and are moving forward with the next step of their medical career-whether that be with a fellowship or GASP might a say an actual job?!! Crazy. My specialty has a separate intern year and then 3 years of residency. Theennnn a fellowship if I want to specialize further.
So, that is why all those other 3 year residencies that my friends went to for their specialties are now finished! I am so proud of all of them for making it through and getting this far. It’s a long road. As for me, now I get to focus on my last year and make it a strong one. This is the year I’ll be really honing my clinical and surgical skills. Thankfully, my program has let me do that the past 2 years as well, but now that I’m in my last year, we get the bulk of our surgical training now.
Even better, I am essentially no longer on call!!! Call has been incredibly rough. First year was the worst, and second year was worse than it should have been, but this year, I am back up to the back up and pretty much should never get called! Woot! Hopefully this means that I’ll actually get have a night to do what I would like to and to sleep through the night without being awaken. I am missing years of sleep at this point so that would be a nice change.
Wish me luck on this upcoming year! And I hope-to all of you incoming interns- that you have a great year. You can do this, I know it is hard. You have worked hard to get to this point. Congratulations for all of those who have made it to the next step of your lives, regardless if that is in medicine, or not. Don’t forget to continue to fuel your year with great food, exercise, people and lots of laughter.
Why not start it off with this super delicious and nutrient packed blueberry maca protein ice cream. Top it with whatever you would like! You’ve got a mix of anti-oxidants from the blueberries, protein from the protein powder and hormone balancing potential from the maca. I recently found maca and OMG LOVE the flavor of it. I think you should definitely try it as it really makes the ice cream flavor what it is. It’s a cold, creamy and delicious treat. Perfect for this time of year, or anytime you could go for some ice cream!
Blueberry Maca Protein "Ice Cream" [Clean, Vegan, Glutenfree, Low Carb]
Ingredients
- ~1/4 cup water
- 1 scoop vanilla protein powder ~35g
- 1 t maca powder
- few dashes cinnamon
- 1/2 cup frozen blueberries
- 3-4 cups ice
- 1/2 T psyllium husk powder optional
Instructions

Cover the bottom of your blender with water (~1/4 cup). Layer your protein powder, maca powder, cinnamon and optional psyllium husk powder first then top with the frozen blueberries and finally the ice.

Use your tamper (if using a vitamix) while blending to push down the ice until it is smooth and there are no more ice chunks. It will be very thick.

Either eat from the blender to save on dishes, or scoop out into a bowl (or more as desired), top with any toppings and eat immediately.
Recipe Notes
This will be VERY thick. Do not add more liquid if you want it to be of soft serve consistency. It will blend up, just be patient. Use your tamper if you have one.
Make sure you blend it enough so you don't have ice chunks, but don't overblend otherwise it will get watery.
I eat this as one serving, it makes A LOT. (I love eating, so lots of volume is great for me). Feel free to break this up into a few servings if you want little bowls for multiple people.

I love blueberries too! You could, but the frozen blueberries help to thicken it. So, I would recommend freezing them if possible!:)
