This versatile berry pecan protein oatmeal bake can be used in many different ways depending on what you need it for. Use it as a breakfast meal prep and have 4 breakfasts made, or slice it into bars and take as a snack or for for a party! This recipe is easily multiplied to make as many squares/bars as you need.

Finally, I’ll get to finish my trip recap for you. I know it’s taken for ever as 1. I had a lot to share with you and 2. there were other posts that I had to get in their in between my recap posts! Oh well, I hope you have enjoyed the recap so far. This post will wrap up some of the outside things we did while in Buenos Aires and also some of the people we met!

Crazy enough, one of the attendings at my program had some visiting fellows from Buenos Aires. So, I reached out to them when I was there and we got to meet up!

There are many different neighborhoods within Buenos Aires, each with their own flair. Caminito was bright and colorful. It has a lot of artist markets here and you can spend a lot of time just perusing through the shops. This is where we met our friends from Buenos Aires. After walking around a bit, they took us around in their car to show us more of the city, which was so awesome.

We went to a few museums, as well. Although, like I have mentioned before you have to really pay attention to hours and days closed before you go. That evening we went with one of the guys and met up with his residents to go out to a traditional Argentina Parilla. I showed you our parilla from Montevideo, Uruguay in this post here. This was different. Now I have tried things like…intestines and parotid gland…yup looks like I can be adventurous haha.

After the meal, although completely stuffed, we were taken to their ice cream shop. Turns out it’s more like an ice cream pop shop! It was SOOO good. There were so many to choose from too. Yum. They had fruit ones, creamy ones, chocolately ones, adult ones made with things like Baileys, Kaluha etc. I got some chocolate crunchy one. It was quite good.

I’m so happy that we got to meet up with people we knew. It’s always so cool to have an insider show you around all their favorite spots. Unfortunately, they were going out of town the next day, so we only got to spend one with them.

There are plenty of neighborhoods to check out while you are there. Not only are their plenty of those, there are also plenty of parks to check out, as well. One of the parks we went to were the rose gardens. The garden was extensive, well maintained and beautiful. I would recommend checking it out if you get the chance. Another bonus is that they have restrooms on site.

Another outdoor idea for you is the Recoleta Cemetery. It is full of mausoleums and huge ones at that! It reminded me a lot of the cemeteries of New Orleans, but these ones are bigger and more extensive.  Recoleta is the neighborhood that we stayed in, so it was a short walk from our apartment. Trying to find the entrance though was a whole other story. HA! I recommend checking out times online because they have free tours that occur throughout the day. The guides were awesome and gave us really cool stories of the people that were buried there and on the history of the cemetery itself.

Overall, Buenos Aires is an excellent sight seeing city. There are many things to see both indoors and outdoors so it doesn’t matter if it a rainy day. I’ll leave you with this farewell picture to the trip. We had burgers from Drafters as our last meal before we headed out. They had really cool flavor combos on homemade specialty buns. I would highly recommend it. It is also super reasonably priced too!

Berry Pecan Protein Oatmeal Bake [Clean, Vegan, Glutenfree]

Prep Time 5 minutes
Total Time 25 minutes

Ingredients

  • 1 cup old fashioned oats
  • 1 scoop vanilla protein powder
  • 1 T cinnamon
  • 1 t nutmeg
  • 1 t cloves
  • 1 T psyllium husk powder
  • 1 handful pecans
  • 1 cup berries
  • water/liquid of choice

Instructions

  1. Preheat your oven to 350 degrees and grease an 8x8 baking dish

  2. Combine your oats, protein powder, cinnamon, nutmeg, cloves, psyllium husk powder in a bowl and mix

  3. You have the option of mixing in your pecans whole, or slightly crushing them before adding them to the mix

  4. Slowly add your liquid of choice and continue to mix until you get a slightly thicker than pancake batter consistency.*

  5. Fold in your berries of choice and then transfer mixture to your baking dish

  6. Bake for approximately 20-25 minutes or until a toothpick comes out clean

  7. Let cool for a few minutes before cutting into either squares, or bars. 

  8. Eat and enjoy! Save leftovers in an airtight container in the fridge or freezer

Recipe Notes

The amount of liquid you will use will depend on how absorbent your protein powder is and how much psyllium husk powder you use. 

If you add too much liquid you will just have to bake it for a bit longer, or add in more psyllium husk powder, oats and or protein powder
