Today’s redux post is a clean eating, vegan, low carb and gluten free treat for you! These Banana Bread Protein Bars have less than 10 ingredients and only require 10 minutes of baking so you will be able to make and eat your banana bread in no time!

Bake Some Bread
Turn on your ovens! Be it tried and true traditional yeast bread, or one of the new trendy protein-added breads, show us what you’re baking. Whether sourdough or bread with added-veggies, don’t forget to tell if it makes great toast too
Sure I have taken some liberty with this prompt, but even though I wouldn’t toast this, it still has the word “bread” in it! Here they are straight out of the oven. But, like I said, if you want it more loaf like- go for it!
I have make actual artisan bread in the past ( proof in this Egg, Avocado, Tomato and Cheese Sandwich Recipe). I have very fond memories of both the bread and the sandwich.
These bars could easily be baked into a bread loaf and sliced like traditional banana bread, but I decided to make them into bar form. Don’t let that stop you from making them, though, because they are delicious! I love to that they fit with a wide variety of dietary requirements since they are clean, vegan, low carb and gluten free!
I have very fond memories of banana bread. I particularly like the part that was not quite cooked all of the way, usually top middle? OH MAN, so good. Moist banana bread, especially with chocolate chips? So good. It was the best way to use up old bananas. I can’t believe people don’t save bananas that are overripe and just toss them. Such a waste! There are so many things you can do with them. Even if you are not ready to bake with them just yet, peel them, break into 2 and place in the freezer. Then they can be used at a future date. Please don’t be wasteful!

Banana Bread Protein Bars [Clean, Vegan, Low Carb, Gluten Free, GrainFree]
Ingredients
- 1 scoop vanilla protein powder
- 1/4 cup coconut flour
- 1/4 t baking soda
- 1/4 t baking powder
- 1 T flaxseed ground
- few dashes cinnamon
- 2 T cashew butter
- 1/2 ripe banana mashed
- water/liquid of choice
- coconut oil optional
Instructions

Preheat your oven to 350 degrees and line an 8x8 baking pan with parchment paper

Grind your flaxseed if you don't already have ground flaxseed

Add your vanilla protein powder, coconut flour, baking soda, baking powder, cinnamon and ground flaxseed to a bowl and mix

Mix in your mashed banana and cashew butter (this is a link to my homemade oil-free 2 ingredient cashew butter)

Slowly add your liquid of choice until you get a batter (with about the same consistency as pancakes)

Use a spatula to transfer the batter to the baking dish and smooth

Bake for 10 minutes or until a toothpick comes clean

Let cool completely before cutting. Make sure to run a knife underneath the bars before trying to remove from the parchment paper.

Top with melted coconut oil if desired. Eat and enjoy!

Keep leftovers in the fridge in an airtight container.
Recipe Notes
If you want to make this into a banana bread loaf, I recommend at least doubling the recipe to get enough unless you are using mini loaf pans. The baking time will also need to be increased to make sure it is cooked through.
The amount of liquid you add will depend on how absorbent your protein powder is. I used water.

I was just wondering, i dont see the nutritional values already posted but i guess i could add it up, i was looking for something different to do with my bananas and something healthy and energy boosting so i cant wait to try this!
I don’t place nutritional values because it can be so dependent on what protein powder you are using, how many grams of banana you are using, if you are making your own cashew butter or store bought etc. However, it’s around 40-50 calories per bar. I have a few other healthy banana recipes that you should check out if you are interested!

Yes! I love adding protein powder too. I put it in practically all of my baked goods. They were so tasty!
