3 Minute Microwave Banana Chocolate Chip Protein English Muffin [Clean,Vegan, GF]...And A Dash of Cinnamon

Since I’ve been down in the deep South for the past year and a half now, this time of year always makes me laugh. I come from an area where feet of snow is no big deal and we are used to driving and working and living in snowy/rainy conditions.

Since I have not been down here long, it still baffles me that people get so worked up (or excited) over even the potential of snow. The temperature had dropped precipitously last week and then there was the alert that there may be some snowflakes on Friday. There was no indication that it was going to stick where we were, but the events that ensured were crazy in my mind.

Schools were cancelled in preparation. There were even talks of potentially shutting down the expressway (mind you for snow that was not suppose to stick).

Not my state, but this is how it felt

As expected, my workday the day of the “snow” turned out to be incredibly light. I had an emergency surgery that morning and then had to get all the way over to the office about 25 minutes away for clinic. It was raining, which is never great if it has the potential to get colder and then ice over. The office staff were super excited and nervous all at the same time, showing pictures of their relatives who actually had snow on the ground. We even had to run out of a patient room to go look at the snow as it was coming down, LOL!

I walked out with my attending and he was very excited about it. I looked and was like Sir, that is not snow, just FYI. You are looking at sleet. He didn’t believe me. I was like…trust me..where I come from I am very familiar with the different variations of cold weather precipitation. He asked how I knew the difference and a whole conversation ensured.

Apparently there had been actual snowflakes, none that stuck though, but I missed them during the clinic day. I saw rain, sleet and hail that day, which is also crazy for down here. Our clinic day was cut down by 2/3rds for the no-shows. Which, honestly, I find to be completely ok. I would rather patient’s miss their appointment and be safe than try to brave weather they are not used to functioning in!

My area at least has official done this πŸ™‚

The next day was cold, but bright and sunny. No joke, though, I literally saw someone in a convertible with the top down. Ha! So, yes, I think the South (or at least my area) is officially back open for business πŸ™‚

3 Minute Microwave Banana Chocolate Chip Protein English Muffin [Clean,Vegan, GF]

Prep Time 2 minutes
Cook Time 3 minutes
Total Time 5 minutes
Servings 1 English Muffin

Ingredients

  • 1/3 cup old fashioned oatmeal ground
  • 1/2 scoop vanilla protein powder
  • 10 chocolate chips
  • 1 T ground flax seed
  • 1 t baking powder
  • few dashes cinnamon
  • 1/2 banana diced
  • water/liquid of choice

Instructions

  1. If you haven't already done so, grind your oatmeal and flax seed. Dice your banana into quarters.

  2. Mix the oatmeal, protein powder, flax seed, baking powder and cinnamon in a small bowl. 

  3. Add water or liquid of choice until a thick batter develops.

  4. Fold in your chocolate chips and diced banana

  5. Pour the batter into a greased ramekin dish* and place in the microwave for approximately 3 minutes

  6. Once cooked, be patient and let it sit for a few minutes to let it cool

  7. Once cool, you can pop it out of the ramekin and, if desired slice into 2 pieces with a bread knife.

  8. If desired, these 2 pieces are sturdy enough to toast! (I like it toasty!)

  9. Once ready to eat, feel free to eat plain, or to top with your favorite nut butter!
