Thanksgiving may sadly be over, but that doesn’t mean leftovers are! Here is a different from the traditional Thanksgiving turkey dishes to give your taste buds a new recipe! This is a super easy 5 ingredient recipe that whips up quickly especially when you have leftover turkey and baked potatoes to use.

Ugh…I wish I were still home. I love it so much. It was so excellent being able to go home at the last minute, but so hard to draw myself away when it was time for me to go back. Sad day. It went by too fast, but honestly, it was amazing to be home. I’m so thankful that I was able to sneak away last minute and spend such valuable time with my family.

Aside from all the massive amounts of eating I got to do while home, I played a whole lot of games, which is pretty much one of my favorite things to do!

I was also introduced to a new game. It’s called sting pong. It’s a bit…violent, but super fun. Actually, I really like just running around the ping pong table haha. The worst is when you mess up and spell out PING and then everyone else gets to take shots at you. Your goal is to not get hit. Thankfully, who knew, it’s super hard to aim a ping pong far distances.

Thanksgiving was also amazing, as it always is. I just love that everyone comes together for good food and drinks and games. It’s fantastic and not at all stressful like some *ahem* other holidays can be. Sigh. I also lover that you pretty much eat Thanksgiving dinner multiple times in a row with all the leftovers. Leftovers=the best.

Also, every year my mom generally tries to make some weird non-traditional dish for Thanksgiving. However, this year?!! IT WAS AMAZING. She made this chocolate cherry cheesecake that was to die for, like, I wasn’t even sure which I liked better, the cheesecake…or the pumpkin pie and that is amazing it was that good!

Anywho, we didn’t have any leftovers, but in case you do, why not try out this leftover turkey dish! It’s got a Mediterrean spin on it and only requires 5 ingredients and minimal time!

Mediterranean Turkey Pesto Bowl


Prep Time 5 minutes
Cook Time 2 minutes
Total Time 7 minutes
Servings 1 bowl

Ingredients

  • 4 oz cooked turkey (could sub chicken)
  • 1 cooked potato
  • 4 green olives
  • 4 quartered artichoke hearts
  • 1/2-1 T pesto

Instructions

  1. If you don't already have a baked potato cooked, for quick microwave instructions, stab the potato all over with a fork and place it in the microwave for 3-5 minutes until it is soft when stabbed with a fork

  2. If you have everything cooked, diced/shred your turkey and potato. You can also dice your olives if you choose. 


  3. Add all ingredients into a bowl and mix in the pesto so that it coats the rest of the ingredients

  4. Heat in the microwave until warm. Eat and enjoy!

This dish is easy to make in bulk or as a meal prep meal!
